Jones, early Saturday morning to a heart attack.
The Cooking In The Dark Team  extends its condolences to Steve and 
his family for this tragic  and unexpected loss.

Funeral services for Brenda (Stewart) Jones, 54, of Apple Springs 
will be held Tuesday, May 12, 2015 at 10:00 a.m. in the Carroway 
Funeral Home Chapel with Reverend Horace Fletcher officiating. 
Interment will follow in the Mt. Zion Cemetery in Trinity County. 
Brenda Jones was born July 1, 1960 in Pilot Point, Texas to Charles 
Ray and Billy Jo (Lee) Stewart, and died Saturday, May 9, 2015 in a 
local hospital. Brenda had resided in Apple Springs for 13 years. She 
enjoyed horseback riding and going to the beach and mountains. Brenda 
loved spending time with her grandson Kanin, and was devoted to her 
animals. She was of the Baptist faith. Survivors include her sons and 
daughters-in-law, Christopher Lee and Janay Jones of Apple Springs 
and Grant and Diana Jones of Lufkin; grandsons, Kanin Lee Jones of 
Apple Springs, Dustin Shupak and Dayton Shupak, both of Lufkin; 
brother, Stephen Stewart of Lufkin; uncle and aunt, Larry and Linda 
Owens of Apple Springs; and best friend, Eva McDuffie of Lufkin. She 
was preceded in death by her parents. Pallbearers will be Chris 
Jones, Grant Jones, Jonathan Smith, Robert Whitley, Dustin Shupak and 
Dayton Shupak. Honorary pallbearers will be Kanin Lee Jones and 
Stephen Stewart. The family will welcome friends and loved ones from 
6:00 to 8:00 p.m. Monday evening at the funeral home. Memories and

[CnD] Brine before you Grill

Howdy Folks!
It is time to break out he grills!
We recorded a new cooking show where we grilled steaks, burgers, and chicken.
Actually it was boneless skinless chicken breasts and I did not want 
them to get dry while grilling.

I brined them for about 45 minutes in the vaccuvin marinater.
(got it at Amazon!)
Otherwise I would have let them soak in the brine solution in a bowl 
in the refrigerator for a couple of hours before grilling.
Anyway, long story short, I seared each side of the breast for about 
4  minutes on a very hot grill.

I had the temp up to high on the gas grill.

Then I reduced the heat to a medium, I should hold my hand over the 
grill about an inch above it for about 4 seconds.
I turned them every 4 or five minutes, closing the grill lid each 
time between turning...

Continued this until my Talking Cooking Thermometer read above 180 degrees...
They came out great!
Very moist and not dry at all!
Breasts are so easy to dry out when grilling, especially the boneless 
skinless ones.

To make brine here is the formula I learned for turkeys...
it is for a gallon so just reduce it as you need.
1 cup sea salt to 1 gallon water...
1/2 cup sea salt to 1/2 gallon water (8 cups)
1/4 Cup to 1/4 gallon (4 cups - Quart)
1/8 Cup (2 Tablespoons) to 2 cups, 16 ounces, Pint
Put your bird into the container you are going to use and pour the 
brine solution  in until it covers the bird by about an inch.

Let refrigerate for about 2/3 hours before grilling.

Losing something you just had in your hand a second ago will drive you crazy!
Where did I put it? I have asked myself a million times it seems.

It especially gets on my nerves when we have to stop recording a 
Cooking in the Dark show so I can find what I just had  in my hand...


To help me keep my blood pressure down, I have tried to teach myself 
to put things back where they go after I have used them

I am still trying to teach myself this.
Getting better but I did lose the hot sauce today...

I have taught myself to lean my cooking utensil, spoon, spatula, 
tongs, etc, in the sink...

actually I lean them in the front left and corner of my sink.
That way when I need to grab the utensil, I always know where they are...
Keep on trucking Jerry!
Heck, once when I was making a meat loaf, I accidentally added a 
package of vanilla pudding...I thought it was my bag of onion and 
mushroom soup mix...
Anyway, that meat loaf was sweet and it was orange! I did not figure 
out why it was that way until after dinner...my wife still won't let 
me live that one down ! (grin)

Hi all.
So sometimes when Im cooking, I forget where I set things down like 
the garlic or a bottle of sauce. The other day I was frying some 
corn taco shells and kept losing the tongs. Sometimes...or most of 
the time the kids will need me for something and I get distracted. 
Does this happen to any of you?

[CnD] Straining Pasta Solutions Pasta info

Hi All,
First, pasta takes10 minutes to cook.
Get your water boiling, add the pasta, and set your timer.
After ten minutes, strain and to stop it cooking, run cold water over it.
for Arlene (sorry spelling may not be 
correct)  pasta, boil about seven minutes and 
strain...then run cold water over it or submerse 
in cold water for a few seconds.


Here are a couple of items I use for straining pasta.
One is the over the sink collapsible colander...
Since this hangs over the sink, it doesn't get 
turned over and is easy to hit with the pasta 
when pouring it through the colander.
Of course this colander has a lot more useful 
applications than just straining pasta.


The locking lid pot is another awesome item.
The lid acts as a colander.
Just a twist locks it in place.
Then just flip the pot over above the sink and it 
will drain the water and hold the contents in the pot.

I also use this pot for boiling eggs.

This is perfect with beans, gumbo, or what we are 
having in the Campbell house tonight, chili!


Dale's Hint: Be sure to heat up the skillet a 
while before adding  the butter and to preheat your oven!

Sizzled Cornbread

Ingredients:

1 cup stone ground yellow cornmeal
1 cup unbleached white flour
1 tablespoon baking powder
1/4 teaspoon salt
1/4 teaspoon baking soda
1 to 3 tablespoons sugar
1 1/4 cup buttermilk (or 1 cup plain yogurt mixed with 1/4 cup water)
1 large egg
1/4 cup mild vegetable oil, such as corn, canola, or peanut
Pam
2 to 4 tablespoons butter

Directions:

Preheat oven to 375. Make sure your oven's 
accurate, too; it really needs to be up to temperature to get perfect results.
In a large bowl, combine cornmeal, flour, baking 
powder, salt, baking soda, and sugar. (If baking 
powder or soda appear at all lumpy, sift them

in). Stir well to combine.
In a small bowl, whisk together buttermilk, egg, and oil.
Spray a 9 to 10 ¼ -inch cast iron skillet with 
Pam (our skillets are 10 1/4 inch; this size is 
called a Number 7). Put the skillet on over 
medium heat, add the butter, and heat until the 
butter melts and is sizzling seriously. Tilt the 
pan to coat the sides of the skillet.
As the butter's melting, quickly pour the wet 
ingredients into the dry, and, using a wooden 
spoon, stir the wet and dry together with as few 
strokes as possible --- only as many as are 
needed to combine the two. Don't beat it; don't 
smooth it out. Scrape the batter into the hot, buttery skillet ---
if you've gotten it hot enough it will sizzle as 
it goes in --- and pop it in the oven immediately.
Bake until golden brown on top, about 25 to 30 
minutes. Serve, hot, cut in wedges.

Cajun vs. Creole Food - What is the Difference?
Compared to Louisiana, other states have it easy. Sure, Louisiana is 
home of the Big Easy and the locals are known for our joie de 
vivre, but we are
also parents to some of the most precious cuisines in the world. 
While we may, on occasion, have one too many Bloody Marys at Sunday 
brunch or add some
punch to our milk, we don't take our responsibility lightly. Like 
real parenting, this job has no vacations. Even when away from the 
motherland, Louisianans
still find ourselves bragging about and, on occasion, having to 
defend our pride and joy. Perhaps the most difficult task is 
explaining Louisiana food
in a few short sentences. Of course, a Louisianan would prefer to sit 
down, put on a pot of coffee or pour a cold beer, and talk about it. 
However, we've

come to learn that most people don't have the time to do that.

So if you're versed on Louisiana history and culture, then all you 
really need to know is that Creole cuisine uses tomatoes and proper 
Cajun food does not.
You can stop reading now. That's how you tell a Cajun vs. Creole 
gumbo or jambalaya. You're welcome (to be fair, some Cajun food, such 
as a sauce piquant,
does include tomatoes as a key ingredient). However, if you'd like to 
know more, please continue reading so that you can learn why the 
terms Cajun and
Creole that have become used so loosely and interchangeably when 
describing Louisiana food, are not at all the same.


A vastly simplified way to describe the two cuisines is to deem 
Creole cuisine as city food while Cajun cuisine is often referred 
to as country food.
While many of the ingredients in Cajun and Creole dishes are similar, 
the real difference between the two styles is the people behind these 
famous cuisines.
They say in order to really know someone, meet their family. The same 
goes for food. In Louisiana, the best place to find authentic Cajun 
and Creole cooking
is in homes across the state, which is what makes the food so 
special.  Many of Louisiana's most talented chefs learned their trade 
from their parents
or grandparents. Cajun and Creole are two distinct cultures, and 
while over the years they continue to blend, there is still a vast 
distinction in Louisiana,

and both have their own unique stories.

Cajun Food

The word Cajun originates from the term les Acadians, which was 
used to describe French colonists who settled in the Acadia region of 
Canada which consisted
of present-day New Brunswick, Prince Edward Island and Nova Scotia. 
With the British Conquest of Acadia in the early 1700s, the Acadians 
were forcibly
removed from their home in what become known as Le Grand Derangement, 
or the Great Upheaval. Many Acadians eventually settled in the swampy 
region of Louisiana
that is today known as Acadiana. Actually, four regions of south 
Louisiana were settled by the Cajuns, each with different resources 
and influences. Those
distinct areas are the levees and bayous (Lafourche and Teche), 
prairies (Attakapas Indian land), swamplands (Atchafalaya Basin), and 
coastal marshes (New

Orleans area and Houma).

The Acadians were an extremely resourceful people who combined the 
flatlands, bayous, and wild game of South Louisiana with its 
proximity to the Gulf of
Mexico to create a truly unique local cuisine. While many Acadiana 
residents today have Native American, German, French, or Italian 
roots, among others
(which have all influence Louisiana Cuisine in the their own ways), 
their way of life is strongly influenced by the Cajun culture. Along 
with its food,
this rural area of Louisiana is famous for its Cajun French music and 
language. ? With no access to modern-day luxuries like refrigerators, 
early Cajuns
learned to make use of every part of a slaughtered animal. When a pig 
is butchered the event is called a boucherie.

Boudin
, a type of Cajun sausage which consists of pork meat, rice, and 
seasoning stuffed into a casing, also commonly contains pig liver for 
a little extra flavor.
Tasso and Andouille are two other Cajun pork products that use salts 
and smoke as preservatives. Cajun food is famous for being very well 
seasoned which
is sometimes misunderstood as spicy. Seasoning is one of the most 
important parts of Cajun cooking, and that comes from much more than 
a heavy helping
of cayenne pepper. Most dishes begin with a medley of vegetables 
based on the French mirepoix. The holy trinity of Cajun cuisine 
utilizes onion, celery,
and bell pepper (rather than carrots) to provide a flavor base for 
many dishes. Garlic is never far away from any stove, either.

Here is the Candy Cane Cookie Recipe:
Candy Cane Cookies
Ingredients
1  cup sugar
1  cup butter or margarine, softened
1/2  cup milk
1  teaspoon vanilla
1  teaspoon peppermint extract
1  egg
3 1/2  cups all-purpose flour
1  teaspoon baking powder
1/4  teaspoon salt
1/2  teaspoon red food color
Optional:
2  tablespoons finely crushed peppermint candies
2  tablespoons sugar

Directions
1 Stir together 1 cup sugar, butter, milk, 
vanilla, peppermint extract and egg in large bowl.

Stir in flour, baking powder and salt.
Divide dough in half.
Stir red food color into 1 half.
Cover and refrigerate at least 4 hours.
2 Heat oven to 375ºF.
3 Stir together peppermint candy and 2 tablespoon sugar; set aside.
4 For each candy cane, shape 1 rounded teaspoon dough from each half into
4-inch rope by rolling back and forth on floured surface.
Place 1 red and white rope side by side;
press together lightly and twist.
Place on ungreased cookie sheet; curve top of 
cookie down to form handle of cane.
Note:Use small amounts of the dough at a time, 
leaving the remainder in the fridge to stay chilled.

Dough gets a little sticky and harder to shape when  it becomes warm.
5 Bake 9 to 12 minutes or until set and very light brown.
Immediately sprinkle candy mixture over cookies.
Remove from cookie sheet to wire rack.
Cool completely, about 30 minutes.

[CnD] Black Bean Chicken

Here is a fast one I made last night...
Ann Bliss sent me this recipe a while back and it is always delicious.
I used 4 boneless skinless chicken breasts, one 15 ounce can black 
beans and one can of hunt's diced tomatoes with roasted garlic about 
14/15 ounce can.
This is also great with two cans of Rotel tomatoes or  just a can of 
diced tomatoes.

...
Preheat your oven to 350 F.
I lined a 9 x 13 cake pan with foil just to make clean up easier.
Dump in the can of  black beans, undrained, into the cake pan and spread out.
Next do the same with the tomatoes...
Now place the chicken breasts on top of the beans; be sure to  not 
let the chicken touch if possible.
Season the chicken, I used a little fresh ground pepper, Adobe 
seasoning, and a sprinkle or two of garlic powder.

Cover the pan with foil, and bake for about 45 minutes...
Served over a bed of greens, i use romain lettuce and spinach leaf, 
pasta, rice, or it is great over nothing too.

I used spiral pasta last night!
To serve, put a chicken breast on top of your bed, greens, pasta, or rice...
Cover the chicken breast with the black beans and tomatoes from the pan.
Enjoy!

[CnD] Beer Butt Chicken

We usually do this  on the grill or smoker, but this one I did in the oven.
I used a 5 pound hen, seasonings and rubs, and a can of beer...I 
choose Budweiser.

Lower your oven rack to its lowest point.
Preheat your oven to 250 F.

I removed the organs from the bird's cavity and wash it under running water.
I salted and peppered the cavity
and I next separated the skin and used a little of my favorite dry 
rub on the breast meat of the bird.

Then after pressing the skin back down, I rubbed a little olive oil on it.
Ready for salt and pepper and a little Adobe too.
The oven was preheated at 250 degrees F and was ready to receive the bird!
.
Now with the bird seasoned and ready to go, I opened the beer and put 
it in the birds cavity, open end up...
I transferred the bird and its beer to a 10 by 13 baking pan, and 
with the bird standing upright  on the beer,

slowly and gently placed the bird in the oven...
it looked like it was standing in the oven!
I baked it for 3 and a half hours.
I checked the temperature of the bird's thigh and my talking cooking 
thermometer gave me a temp of 181 F.

Perfect1
I pulled the bird out and let him rest for a few minutes...probably about 10.
My wife said it looked delicious standing there!
I lifted the bird up and at the  same time pulled down on the beer can.
Be careful, the can is a little hot and so is the beer that is still 
in the can.

With the beer removed, we practiced our Thanksgiving Turkey carving on it
and it was delicious!

Jim,
Welcome to the list.
The Koschutta store at Blind Mice Mega Mall has  slow cookers/ crock pots.
They  have the simple models, with settings of off, low, high,and warm.
Unfortunately nothing digital is adapted with speech for the blind.
I have used a light timer before to turn the crock pot on about 8 
hours before I was to be home...

just plugged it into the outlet and the crock pot into the timer...
Worked fine.

eight hours, and after twelve hours, some foods kind of dry out or become
somewhat sticky or like paste grin.

So, do any of you have any recommendations for a good slow cooker or
Crockpot with perhaps a timer function that would be accessible to blind
people?  I somehow doubt there'll be one that does what I'm looking for, but
I just thought I'd ask.especially blind people who might have similar
experiences.  I've been online, looking at the supposedly easy programmable
ones, but what scares me is the digital setting ability.

Any suggestions would be great.

Howdy,
I use ground turkey for all my ground meat recipes...
meat loaf, tacos, burgers, appetizers, and with seasoning, you can't 
really tell the difference.
But I bet you will see a difference in the amount of grease left 
after the meat cooks.
Try adding a package of ranch dip mix to your next batch of 
burgers...french onion dip mix is good too and of course you can't 
beat Lipton's onion soup mix added to your burgers...

try it with turkey and see if you can taste a difference...

Shirley,
I place the mandolin flat across a bowl.

I place the little finger cut outs at the blade end on one side of 
the bowl and the handle  on the other.
This allows me to hold the mandolin and also slide the food item 
through the blade using the finger guard of course.

The food slices off and falls into the bowl.

You can select the thickness of the slice by sliding the bar on the 
back of the mandolin up.
With it all the way down, towards the end with the blade, it will be 
closed...the platform will be even  or a little above the blade.

The slide bar has three thickness settings.
The first stop is very thin...
I use it for potato chips...

[CnD] Dale's Broccoli Slaw

This broccoli slaw will be a big hit
and it is so easy to prepare
It makes quite a lot so I sometimes will mix it up in a 12 quart pot...
I got it word of mouth from an old neighbor at a neighborhood pot luck.
The horseradish in it gives it a unique taste that will have them 
coming back for seconds and maybe thirds!

I have made a few changes to her original recipe so  without delay,
here is:
Dale's Broccoli Slaw

Ingredients:
2 10/12 ounce bags broccoli slaw
*I have used regular Cole slaw if not available.
1 10/12 ounce bag broccoli florets or small whole broccoli head
1 pint sliced white mushrooms
16 ounce jar/bottle mayonnaise
2 to 4 tablespoons prepared horseradish
6 slices bacon, crispy
1 10/12 ounce bag shredded cheddar cheese
1/4 cup sunflower seeds

Directions
In a  large bowl, combine broccoli slaw, broccoli florets, and mushrooms
The broccoli florets and mushrooms should  be in bite sized pieces.
You might need to cut the  broccoli florets into smaller pieces and 
break the mushroom slices into smaller pieces too.

Fold these together with your hands just to mix them a little and set aside.

In a second bowl, the 4 cup Pourfect Mixing Bowl works great here,
combine the mayonnaise with the horseradish.
This controls the taste of this awesome salad.
If you are not sure how much to put in, start with a single 
tablespoon, mix it into the mayo and give it a taste.
You want it to be noticed...kind of like a salsa that has just a 
little bite to it.
I use about 3 tablespoons for family outings and 4 tablespoons for my 
Monday Night Football Crowd.

Now add the  crumbled bacon, cheese, and sunflower seeds.

Now it is time to get messy!
Combine the  mayo/horseradish with the slaw misture.
(Note: Be sure to remove jewelry. You might also want to turn on the 
water at the sink to rinse your hands...don't forget a towel too)

Bet your hands into the mixture and mix it up thoroughly.
Be sure to get  the stuff at the bottom to the top...
Once the mayo has coated the slaw misture,
scrape off any of Dale's Broccoli Slaw that might be clinging to your 
hands and fingers...


Notes:
Add about a cup of Golden or Purple Raisins once a while too.
I have done it with when I left the party, the bowl was empty!.
grapes sliced in half lengthwise are a nice substitution for the raisins.

[CnD] Beer Bread! Delicious and EASY

Hi Folks!
The Cooking in the Dark show is back after a brief, well a long brief break!
Here is a recipe we make on the first show of the season!
It is easy and delicious!
Beer Bread
3 cups flour
3 teaspoons baking powder
1 teaspoon salt
1/4 cup sugar
1 12 ounce beer, a dark or stout beer works best...
I used Shiner Boch

do not use light beer like Miller Lite, Bud Light, etc.
Directions:
Combine and blend all dry ingredients.
Add the beer and mix well.
Put into a 3 by 8 loaf pan sprayed with vegetable oil and press down 
to even out in the loaf pan.
Hint: wet your hands under the faucet before handling the dough to 
reduce sticking...

the dough will be pretty sticky.

Bake at 400 degrees F for 60 to 70  minutes.
or until the loaf sounds hollow when tapped on top
The crust will be pretty hard
but it will be soft and tasty inside!

[CnD] Ooey Gooey Caramel Cookies

Howdy Ya'll,
I do not remember who posted this awesome cookie  recipe.
I apologize for that.
My notes to myself concerning this recipe are also included.
These are slightly different than the original's notes.
And just as the person that posted this said,
These will go fast...
And they will!
Ooey Gooey Caramel Cookies
1 cup butter, softened
3/4 cup packed brown sugar
1/2 cup granulated sugar
1 egg
2 tsp. vanilla extract
2 cups all-purpose flour
1 tsp. baking soda
Pinch of salt
6 squares  (1 oz. each)  chocolate, chopped
or use semi- sweet chocolate chips
** I substituted 3/4 cup semi sweet chocolate chips.
25 individually wrapped vanilla caramels, quartered (I recommend
Kraft Caramels)
** I substituted 3/4 cup caramel tidbits.  Much easier and  faster.
1/2 cup chopped pecans (optional)
** Go ahead, add the nuts! Walnuts are a good substitute.

Instructions:
1. Preheat oven to 375°F/190°C
** (I baked at 350°F/180°C).
Line cookie sheet  with parchment paper.
This is a must. The cookies will stick to the pan 
if it's not lined with parchment

2. Cream butter, sugars, egg and vanilla in a large bowl on medium
speed of electric mixer until light and creamy.
3. Combine flour, baking soda and salt. Add to creamed mixture,
beating on low speed until blended.
Stir in remaining ingredients by hand.
** I used my impeccably clean hands to mix.
 I got a good feel when it was mixed well.
Drop spoonfuls at least 2 inches apart on the prepared cookie sheet.
The cookies will bake out to about 3 inches in diameter.
**  If you are careful and keep your 
cookie  dough on the parchment paper, clean up will be a breeze!

Bake for 8 to 12 minutes
** I baked mine for 12 minutes. at 350°F/180°C).
 5. Cool for 5 minutes then transfer to rack and cool completely.
** After letting the cookies cool on the cookie 
sheet for five minutes, I just slid the parchment 
paper from the cookie  sheet to the cooling rack.
After about 10 minutes, the cookies were cool 
enough to lift off the parchment paper.
After lifting the cookie off, I put it back down 
on the parchment paper until completely cool.

The bottoms of the cookies will remain sticky until completely cool.
Note: You may substitute white chocolate chips or chunks for the semi-
sweet chocolate.

Makes 3 dozen (3-inch) cookies.

Re: [CnD] making tacos

First go to the cooking in the dark archives and listen to one of the 
shows Dale does making tacos.

If you squeeze the meat, tit will be crumbly feeling when cooked.
It will still feel soft and doughy if not browned completely.
If you stir slowly from the outside edge of the pan towards the 
center of the pan, y0ou won't  be as prone to flipping the meat out of the pan.

Some folks us a small, about 4 quart, pot to brown their taco meat.
Another suggestion is to use a skillet called a chicken fryer.
It is usually about 12 to 14 inches in diameter and has tall sides, 
about 3 inches or so that are perpendicular to the pan bottom instead 
of angled like a regular skillet.


I use chicken a lot for our tacos.
I toss in about four boneless skinless chicken breasts, usually still 
frozen into a skillet.
I add about a half cup of water, cover and let steam/cook for about 
ten minutes on medium heat.

I flip  the breasts over and let go another 5 to 6  minutes.
Then I turn the heat to low,
pull the chicken breasts out and put under  cold water to cool.
I shred the chicken breasts, return to the skillet, and add my seasoning.
Mix everything together.
You can stir in little  wisps, starting at the edge of the skillet 
and  moving towards the center of  the skillet or take a spatula 
and  just scoop up some of the meat and  turn over...repeat either 
procedure  a few times.

Cover and let simmer for about 10 minutes on medium low.
Take the lid off and mix again.
Cover and let simmer for another 10 minutes or so.
Then mix again and this time leave off the lid.
Let  the meat continue to simmer uncovered for another 10 minutes or so.
This will help cook off some of the liquid in the chicken.

Turn off the heat, fill your shells, add your favorite  toppings like 
tomatoes, lettuce, salsa sour cream jalapenos, etc and enjoy.
For crispy shells, hang them on your oven rack and heat for about 3 
or 4 minutes just before eating!

I start heating the oven at 350.


While the oven is heating up I hang the shells on the oven rack.
slide in the rack and let them bake for about five minutes.
Turn the oven off and the shells will stay hot until you are ready for them.
We pull out a few and leave the rest in the oven until we are ready for them.

Hello all.  Tonight I had my first experience making tacos.  I had a 
few issues, and a couple of questions.  How do you guys tell when 
the meat is completely done?  When I thought it was done, sighted 
people said there was still some red meat there.  Also I had a lot 
of trouble stirring in the seasonings and water and getting 
incorporated.  I was afraid I was going to start throwing the meat 
everywhere, so for that reason I'm a bit timid.  Do you guys have 
any tips on making taco meat?

Here is the recipe for the Microwave White Chocolate Cake

Better get a glass of milk ready!
Microwave White Chocolate Cake
Lisa adapted some milk and dark chocolate cake recipes for this one.
It's extremely rich and moist.
It's really good with a side of raspberries or strawberries.

Microwave White Chocolate Cake
If you can't find white chocolate ingredients, 
substitute regular chocolate and semi sweet chocolate chips.


Note: Lisa's microwave is around 1100 watts, so 
your cooking time will vary based on your microwave.


1 box white cake mix
1 3 oz. box sugar free white chocolate pudding
1 12 oz. bag white chocolate chips (I used 6 
ounce bag of white chocolate chips because  of their richness)


4 large eggs
3/4 cup vegetable oil
3/4 cup light sour cream

Mix cake mix, pudding, and chocolate chips tossing gently.  In a separate
bowl, combine eggs, oil and sour cream, whisking until completely combined.

Slowly add egg mixture to dry ingredients beating until batter is formed.

Pour into 10-12 cup silicone or microwave safe Bundt pan and Cook on high
for approximately 9 1/2 minutes or until toothpick comes out clean.
Let cool for 10-20 minutes before turning onto plate.  Sprinkle with
powdered sugar if desired.

We made this for show 265, next week's Cooking In The Dark Show...
Show 265.
It is delicious and is now one of my favorite recipes!
The lemon zest dressing tops it off!
Enjoy ya'll!

Roasted Chicken Salad with Apples, Golden Raisins, and Tarragon
Ingredients:
3 cups cubed cooked chicken, taken from roasted legs and thighs
2 large green apples, peeled and cubed
1/2 cup golden raisins
2 tablespoons finely chopped fresh tarragon
1 cup mayonnaise
2 tablespoons rice wine vinegar
2 tablespoons cold water
Grated zest of 1 lemon
Kosher salt and freshly ground black pepper
Butter lettuce leaves, for serving

Assembling the salad:
Combine the chicken, apples, raisins, and tarragon in a large bowl.

Making the dressing: In a small bowl, whisk together the
mayonnaise, vinegar, water, and zest.
Season with salt and pepper.
(We like lots of pepper here.)
Finishing the salad.
Dollop the dressing on the chicken salad and toss to coat.
Refrigerate for at least 1 hour before serving in lettuce cups.

Will,
After a little practice you will be able to feel through the knife or 
spoon where the spread you are applying is either on the bread or 
where it is not.
I practiced with a piece of toast at first and after getting the 
technique down, I practiced with untoasted bread.
Toast is a little firmer and a little rougher than a piece of bread 
so it  gives a good tactile reference to allow you to feel through 
the knife where you have  or have not buttered it.
run the knife across the toast without any spread on it so you can 
get to know the feel of it through the knife without anything on the toast.
I used peanut butter to practice with since it is a little thicker 
and stickier than regular  butter...
plus I love peanut butter and enjoyed practicing and eating my 
mistakes and successes! (grin)

To butter, I usually start at one edge and spread towards the middle.
I do the same at the opposite side buttering again towards the middle.
Then I spread from the middle to the two edges that I did not butter.
After doing this, I trail the knife blade along the edges, from 
corner to corner, to hopefully completely cover the entire piece of the toast.
As you spread the peanut butter on the toast, be conscious of the 
feel of the toast and peanut butter under your knife...
you should be able to detect where there is peanut butter and where 
it is missing on the toast.
When you reach the point where you think the peanut butter is 
covering the toast, go ahead and inspect your work by taking a look 
at it with your fingers...

Practice makes perfect!
The more  you do it the easier it will become.
Remember, there is no right or wrong way to  apply a spread, butter, 
peanut butter, mayo, mustard, etc, and this is just my technique...
After a bit of doing it I am sure you will have great success doing 
it your way!

We have no affiliation with them other than I thought  some of you 
might like o see what they have to offer...
meat grinders, spices for sausage making, grilling, smoking, pretty 
much everything you might need for making your own sausage and lots more.

[CnD] Crock Pot Monterey Spaghetti

Crock Pot Monterey Spaghetti

4 oz. spaghetti, broken into pieces

1 egg

1 C. sour cream

1/4 C. grated parmesan cheese

1/8 t. crushed garlic

3 C. shredded Monterey Jack cheese

1 (10-oz.) pkg. frozen chopped spinach, thawed and drained

1/2 (6-oz.) can French fried onions

In a large pot with boiling salted water cook spaghetti until al dente.
Drain.

In a large bowl mix together sour cream, grated Parmesan cheese and minced
garlic. After beating the egg in a small bowl, transfer to the large bowl
and
blend together. Transfer to a greased crockpot.

Mix cooked and drained spaghetti, 2 cups grated Monterey Jack cheese, thawed
spinach, and half of the French fried onions and add to the crockpot. Stir
contents of crockpot until just blended.

Cover and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours.

In last 30 minutes of cooking, turn to HIGH if cooking on LOW and add
remaining grated Monterey Jack cheese and French fried onions to top of
casserole.
Serve when cheese is melted.

[CnD] Spaghetti Casserole

Spaghetti Casserole

1 lb. ground beef
1 onion, chopped
1/2 green pepper, chopped
1 can tomato soup
1 can cr. of mushroom soup
1/2 lb. spaghetti, cooked, drained
1 1/2 c. grated cheese
salt and pepper to taste

Brown ground beef with onion and green pepper in
skillet, stirring until crumbly.
Stir in soups and 1 c. water
Simmer for several minutes.
Add spaghetti, 1 c. cheese, salt and pepper, mixing well.
Spoon into 2 1/2 qt. casserole.
Sprinkle with remaining 1/2 c. cheese.
Bake in a 350° oven until bubbly and cheese Is melted.
Makes 6 servings.

Here is a cheesey sauce for spaghetti.
Spaghetti Factory Mizithra Cheese Sauce

Recipe By :
Serving Size  : 1Preparation Time :0:00
Categories: Sauces   Pasta

  Amount  Measure   Ingredient -- Preparation Method
    
   2  tablespoons   Flour
   4  tablespoons   Butter
   1  teaspoon  Olive Oil
  10  milliliters   Garlic -- crush
   2  tablespoons   Parsley -- chopped
 1/2  cup   Half and Half
   1  cup   Milk
 3/4  cup   Romano Cheese
White Pepper to taste

Make a light roux over a medium fire with olive oil and butter. Add flour
and cook flour out of raw state; add garlic. Pour milk and half and half
in the roux with pepper and parsley. At the last moment add the cheese.
Place over hot pasta.

Tex-Mex Spaghetti Pie

Ingredients:

1 tablespoon olive oil
2 teaspoons garlic salt
1/2 pound ground meat
1 1/2 teaspoons chili powder
8 ounces spaghetti, cooked
1 cup salsa
4 eggs, beaten
1 cup shredded Cheddar cheese
Salt and pepper to taste

Directions:

Brown ground meat in oil and add garlic salt and chili powder. Put 
meat mixture, spaghetti, salsa, eggs and shredded Cheddar into a 
casserole dish. Cover,
and bake at 350 degrees F for 30 minutes, then uncover and bake an 
additional 15 minutes.

Pasted below is a message we received from ACB Radio concerning a 
move to a new server.
This move could disrupt service on the Cooking In The Dark List from 
Monday, January 14th until Wednesday January 16th.
Give the following a read if you would like to know what they are 
doing and why.

I have some exciting news about some changes coming to ACB Radio.



First of all we will be moving to a new server.



Unfortunately it won't be the final new server quite yet as that 
server isn't quite ready.




We will be temporarily moving to the Implex server until the new 
datacenter has the new server online.




The Implex server currently houses the acb.org, brailleauthority.org, 
ccbnet.org and cclvi.org websites.




The only drawback in the short term is we won't be able to have all 
of the on demand archives available due to disk space limitations.




Once we get to our final new server that will be resolved.



On Tuesday January 15, 2013 we will be launching the new ACB Radio website.



This site is in drupal and will give us much more capability in 
adding more features such as rss feeds, easy to use contact forms and 
much more!




When it launches it will have the current schedules for ACBRadio 
Interactive, ACB Radio Mainstream, and ACB radio World News and Information.




The schedules will be in the US eastern time zone.



Other time zones may be added at a later date.



The schedules will be very easy to get to with out having to hunt all 
over the site to find them.




All you will have to do is click on the ACB Radio schedule link on 
the main page and choose the day of the week you wish to inquire about.




On that page you will see the times for your favorite shows grouped by stream.



For example you would see a heading for each stream and the shows and 
their times listed under that heading.




Then to listen to ACB Radio you would just click on the listen to 
acbradio link and scroll down to the stream you want to listen to.




Each stream will have its own heading and under that heading you can 
choose the link for your connection speed and player of choice.




The on demand won't be available when we go live but we will be 
bringing in the archives and making them available as quickly as possible.




Also in the near future we will be working on adding the rss 
capability for the front page and for each show that we are currently 
airing on ACb Radio.




Eventually we will be bringing the mainmenu.acbradio.org website in 
to drupal but that will be a while yet.




Now to get to this point we are going to have to transfer the domains 
from one server to another so this means there will be some extended 
outages on the ACB Radio streams as well as the lists and websites.

I got this recipe from Sally.
This recipe also doubles easily for more dumplings!
I use it when I make chicken and dumplings

Dumplings

One cup flour
two tsp's baking powder
1/2 tsp salt.
1/2 cup milk
two tbsp's salad oil
Stir until all is moistened.  I have added just a little more flour for more
easily handling but you want them to be somewhat moist.
Drop on boiling
stew.  Cover tightly and bring to a boil.  Reduce to a simmer and cook for
12-15 minutes.  (do not lift the cover until finished cooking.  When
measuring each dumpling dip the spoon in the hot soup as the dumplings will
slide off the spoon more easily that way.  I usually go in a clockwise
fashion when putting the dumplings in the soup.

I imagine it would work with foil too.
You might lightly spray the foil with a little vegetable spray just 
incase the chocolate melts a lot onto the foil.

You want these to  melt just enough where the candy is soft but not runny...
and the pretzel  and candy become one...

use the small twisted pretzels.
I line a baking sheet with parchment paper, lay out the pretzels and 
put a rollo candy on each.
I bake them in a 350 oven for about 4 to five minutes...just enough 
to soften the chocolate of the rollo so it will melt around the pretzel.


I also make these using the same procedure using Hershey's kisses.
After removing them from the oven with the Kisses, I top with a M  M 
peanut candy...

During the holidays you can get them in red and green!

Your actual bake time will vary depending on your oven's temp.

[CnD] Christmas Wassail Punch

We made this on the Cooking in the Dark Show this week.
Merry Christmas!
Enjoy!
Christmas Wassail Punch

In the crock pot or slow cooker:

2 quarts apple cider
2 cups orange juice
1 cup lemon juice
5 cups pineapple juice
2 tbs cloves whole
3 cinnamon sticks
2 tbs all spice
1/4 ts apple pie spice
sweeten to taste with sugar, sugar substitute or honey
Note:  Put all the spices in some cheese cloth.


mix all ingredients in slow cooker and heat on high half an hour until it
simmers.  turn to low and serve hot.  Remove cloves when taste is to your
preference.

Cloves will continue to add spice to the mixture as long as they are in it.
To long and it will over ride the rest of the flavor.  Enjoy.

[CnD] Hot Chocolate Mix (makes 80 servings)

I love this...
I also use it in my coffee!
Hot Chocolate Mix

This makes 80 servings!

Note: I use a 12 quart pot for mixing up the ingredients!
Makes Great Gifts!
Put some of this Hot Chocolate Mix in a
Mason jar or decorative container along with the directions
and give it as a gift!

Ingredients:

2 1 pound box instant chocolate mix, (Quik is recommended)
12 and 1/2cups dry milk, (sometimes called powdered milk)
1 pound instant creamer (Try Chocolate Coffee Mate)
2cups powdered sugar

In a large bowl, combine all of the ingredients in the order given.
Gently stir together.
Making a Cup Hot Chocolate:
Use 1/8cup to 1/4cup of the mix
with each cup of hot water or milk.
Keeps well.  Makes about 80 servings.

Slow-Roast Turkey with 40 Cloves of Garlic and White Wine Pan Gravy
Prep time: 1.5 - 2 hours, divided over a couple of days
Roasting time: 3 - 4 3/4 hours for a 12 to 20-pound bird that is not stuffed
Total time: 4.5 - 6 3/4 hours
Yield: Serves 8 to 25 depending on the size of your turkey

The gravy broth can be prepared a week ahead and frozen;
the garlic and turkey seasoning can be prepped a day in advance.

Slow roasting whole cloves of garlic with the 
turkey takes the buds from raunchy to sweet and as endearing as a babe.
They scent the pan juices and mellow your gravy. 
I guarantee that this recipe will not clear the house or your sinuses.
In fact, I think garlic, like certain chiles, has 
a lovely mellowing effect on gatherings.

If you can, season the bird the day before.
Remember that once the turkey is cooked, it needs 15 to 25 minutes of rest ­
this is your grace period to warm up sides, make the pan gravy and breathe.
If you need to hold off serving, the turkey could 
be turned down to 275º F, but don’t let the 
breast meat cook beyond 170º F on an instant-reading thermometer.


Cook to Cook: As for selecting a turkey, my 
personal preferences run something like this:
The best buy for our scant dollars is a basic 
supermarket turkey (not self basting ­

you’re paying for water and salt). It will work brilliantly here.
For more money I’d choose a turkey raised 
solely on vegetarian feed (free range or not).
If your ship is coming in, I would go for a 
certified organic or heritage bird.


When you’re ready to roast, be sure to use a 
large, shallow pan, not the usual deep turkey 
roaster, and nurture the bird with its own juices by basting often.


Ingredients
Seasoning the Turkey (do a day ahead, if possible):
4 to 5 heads of garlic (yes, that's right, heads)
1/2 medium onion
A generous 1/2 teaspoon each whole all spice and 
black peppercorns, ground very fine, or 3/4 teaspoon of each spice, pre-ground

1/2 teaspoon salt
2 teaspoons fresh thyme leaves
1/3 cup tight-packed fresh basil leaves
1 generous teaspoon dried basil
A generous pinch hot red pepper flakes
1 tablespoon tomato paste
1 tablespoon honey
8 large garlic cloves (from the garlic above)
Juice of 1/2 a lemon, or more to taste
1/3 cup good tasting extra virgin olive oil
2 thick slices of bacon
12 to 20 pound turkey (see Cook to Cook), 
giblets, neck and wing tips saved for the gravy

One recipe: White Wine Pan Gravy

Roasting:
Coarse salt
About 1 bottle dry white wine (sauvignon blanc or pinot grigio)
3 stalks celery with leaves
2 medium onions, cut into 1/2-inch thick rounds
2 large carrots, cut in half lengthwise

Garnish:
5-6 springs of pine or
2 large bunches of Italian parsley or
2 bundles of fresh thyme

Instructions

1. Up to a day ahead, prep the garlic.
Don't break off the cloves, just set the heads, root down, on a work surface
and give each head a whack with the bottom of a sturdy saucepan.
You want to break up the head and partially crush 
the cloves so you can slip off their skins.

Slip them off. Bring medium size sauce pan of water to a boil,
boil the cloves 2 minutes,  drain in a colander 
and rinse with cold water to chill.
Set aside the 8 cloves needed for the turkey 
seasoning. If not using the garlic right away, put it in a

container, loosely cover (don't seal it) and chill.

2. A day ahead if possible, season the turkey. 
Put all of the seasonings (except for the bacon)

into a food processor with the 8 garlic cloves. Purée everything.
Taste for a distinctive taste of lemon ­ add more if needed.
Then purée in the bacon.
Now season the bird under its skin by starting 
with the breast down at the cavity end.
Gently run your fingers under the skin up to the 
top of the bird, and spoon in several tablespoons of seasonings.

Do the same with the thigh and leg areas as well.
You will probably have a third or more of the 
seasonings left. Cover it up and store in the fridge.

Put the turkey on a platter, loosely cover it and chill over night.

3. The next day, take the turkey out of the 
refrigerator an hour before roasting.
Preheat the oven to 400ºF. Cluster the celery, 
carrot and onion in the center of a shallow 
roasting pan so they make a rack for the turkey.

Rub the reserved seasonings over the entire turkey and into the cavity.
Sprinkle the bird on all sides with salt. Set it 
breast down on the vegetables,

and lower heat to 325ºF.
4. Count on roasting the turkey for about 13 to 15 minutes to the pound,
or until an instant reading thermometer tucked 
into the breast reads 170º to 175ºF.


5. After the first 30 minutes, pour 1/3 of the 
wine over the bird, and baste frequently with pan juices.
After another half hour, add another 1/3 of the 
wine. Then baste with pan juices.
When the turkey is 90 minutes from being done, 
add the garlic with the remaining wine to the pan juices.

Keep basting the bird as usual. Take care that the garlic doesn't burn ­
keep it moistened with pan juices.

A decadent secret recipe for chocolate walnut fudge.
It takes only 10 minutes
of prep time to mix up this delicious fudge and then after
refrigerating for a few hours, you will be enjoying your own
homemade fudge.

Chocolate Walnut Fudge

1/2 cup butter
1 cup semisweet chocolate chips
1 teaspoon vanilla extract
2 cups white sugar
1 (5 ounce) can evaporated milk
10 large marshmallows
1 cup chopped walnuts

Butter an 8x8 inch dish.

Place butter, chocolate chips and vanilla in a mixing bowl. Set
aside.

In a medium saucepan over medium heat, combine sugar, milk and
marshmallows. Bring to a boil, stirring frequently. Reduce heat to
low and cook 6 minutes more, stirring constantly. Remove from heat.

Pour marshmallow mixture over contents of mixing bowl. Beat entire
mixture until it thickens and loses its gloss. Quickly fold in nuts
and pour into prepared pan.

Refrigerate several hours until firm.

Makes 1 - 8x8 inch dish

Eerie Witch's Brew
A smoking cauldron of punch made with grapes and orange peel
masquerading as eyeballs and worms.

Amount  Measure   Ingredient -- Preparation Method
4  c Cranberry juice cocktail
1  c Chopped candied ginger -- (1 jar)
3  mdOranges
1cn(12-oz) thawed frozen apple juice concentrate
1  6 oz cn   )  thawed frozen limeade concentrate
2  c Seedless grapes
4  c Water
2  Bottles   (32 oz each) gingerale
1  lbDry ice -- up to 2 lbs

Instructions:

A SERIOUS CAUTION: never touch dry ice; use tongs to handle

In a 1 to 2 quart pan, bring 1 cup of cranberry juice and candied
ginger to a boil over high heat.  Boil, uncovered, about 2 minutes,
set aside.

With a vegetable peeler, pare peel (colored part only) from oranges;
cut peel into thin 2-inch-long worms; or use an Oriental shredder to
make long shreds.  Add orange peel to cranberry mixture. Cover and

chill at least 4 hours or as long as overnight.
Juice oranges;
put juice in a 6 to 8 quart pan or heavy bowl.
Stir in
cranberry-ginger mixture, the 3 cups cranberry juice, apple
concentrate, limeade, grapes and water. If made ahead, cover and
chill up to 2 hours. Add ginger ale and about a 1 pound piece of dry
ice (DO NOT put small pieces in punch or cups); ice should smolder at
least 30 minutes. Ladle into cups. Add any remaining ice when
bubbling ceases.

Makes 5 quarts; allow about 1-1/2 cups for a serving.

I have made these on the Cooking In the Dark Show and also made for 
my wife to take to her 1st grade class for their Halloween party.

Spooky Witches Fingers


1 cup butter, softened
1 cup confectioners' sugar
1 egg
1 teaspoon almond extract
1 teaspoon vanilla extract
2 2/3 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
3/4 cup whole almonds
1 (.75 ounce) tube red decorating gel

1. Combine the butter, sugar, egg, almond extract, and vanilla 
extract in a mixing bowl.

Beat together with an electric mixer; gradually add the flour,
baking powder, and salt,
continually beating; refrigerate 20 to 30 minutes.
2. Preheat oven to 325 degrees F (165 degrees C). Lightly grease 
baking sheets.

3. Remove dough from refrigerator in small amounts.
Scoop 1 heaping teaspoon at a time onto a piece of waxed paper.
Use the waxed paper to roll the dough into a thin finger-shaped cookie.
Press one almond into one end of each cookie to give the appearance 
of a long fingernail.

Squeeze cookie near the tip
and again near the center of each to give the impression of knuckles. 
You can also cut into the dough with a sharp knife at the same points 
to help give
a more finger-like appearance. Arrange the shaped cookies on the 
baking sheets.

4. Bake in the preheated oven until the cookies are slightly golden in color,
20 to 25 minutes.
5. Remove the almond from the end of each cookie; squeeze a small 
amount of red decorating gel into the cavity; replace the almond to 
cause the gel to ooze

out around the tip of the cookie.

Bat Cupcakes

1 (18.25 ounce) package chocolate cake mix
1 (16 ounce) container prepared chocolate frosting
1 (11.5 ounce) package fudge stripe cookies
1 (6 ounce) bag milk chocolate candy kisses, unwrapped
1 tablespoon red gel icing

DIRECTIONS

1. Prepare the cake mix according to package directions for cupcakes. 
Cool. Frost cupcakes with chocolate frosting.
2. Break the cookies in half, and press two halves into the top of 
each cupcake for wings, stripes facing the frosting. Place a 
chocolate kiss in front
of the cookies with the point facing forward for the body. Make two 
beady little eyes with the red gel icing towards the point of the 
kiss. Let the fun

Here is a great recipe for Halloween and the fall!
It is one of my favorites!


Dinner in a Pumpkin

1 pumpkin medium size
1 onion small
1 pound ground beef
2 tablespoons soy sauce
1/4 cup brown sugar
1/2 cup mushrooms
1 10 3/4-ounce can cream of chicken soup
1/2 cup sour cream
1 1/2 cups white rice

Cut a hole in the top of the pumpkin and clean it out.  Make sure you get all
the guts and seeds out but leave the pumpkin entact.

Put rice and water in a microwave safe dish and cook on high until rice is
tender (about 15 minutes.

Brown ground beef in a large frying pan and add onions to saute. When ground
beef is no longer pink add the rest of the ingredients and stir until 
completely

mixed.

Mix ground beef mixture and rice together and pour into pumpkin.

Put the top back on the pumpkin and bake at 350 for 1 hour.

Be sure to scoop out part of pumpkin when serving.

Halloween Lollipops

Ingrediants Instructions:

1. Melt 1 cup of white chocolate chips in a double boiler or heavy 
pan very slowly.


2. Add 2 tsp. shortening-do not use butter or margarine-stir until 
shortening is melted.


3. Spread 2 Tbsp. melted mixture in circles on cookie sheets lined 
with wax paper.


4. Add one lollipop stick near bottom of each circle.

5. Spread melted mixture to completely cover end of the stick.

6. Make pumpkin faces with candy coated chocolate pieces, candy corn 
and a green gumdrop for the pumpkin stem.


7. Chill until firm.

8. Wrap in Halloween cellophane wrap and gather around stick, then 
tie with black and orange ribbons.

TACO PUMPKIN SEEDS

Here is a different twist on Pumpkin seeds..

Ingrediants:

1 cup seeds from freshly cut pumpkin, washed and dried

2 tablespoons vegetable oil

1 to 2 tablespoons taco seasoning

1/4 to 1/2 teaspoon garlic salt...

Instructions:

In a skillet, sauté pumpkin seeds in oil for 5 minutes or until

lightly browned. Using a slotted spoon , transfer seeds to an

ungreased 15--in. x 10-in. x 1-in baking pan. Sprinkle with

taco seasoning and garlic salt; stir to coat. Spread into a

single layer. Bake at 325 for 15-20 minutes or until crisp.

Remove to paper towels to cool completely. Store in an

airtight container for up to 3 weeks...Yield: 1 cup

Jack-O-Lantern Burgers

1 envelope onion soup mix
1/4 cup ketchup
2 tablespoons brown sugar
2 teaspoons prepared horseradish
2 teaspoons chili powder
2 1/2 pounds ground beef
10 slices process American cheese
10 hamburger buns, split


DIRECTIONS

1. In a large bowl, combine soup mix, ketchup, brown sugar, horseradish
and chili powder.
Crumble beef over mixture; mix well.
Shape into 10 patties.
Grill, broil or pan-fry until the meat is no longer pink.
2. Cut eyes, nose and mouth out of each cheese slice to create a 
jack-o-lantern.

Place cheese on burgers; cook until cheese is slightly melted,
about 1 minute. Serve on buns.

Have you tried Pea Pod for groceries.
Unfortunately, they are not in every market.
Visit Peapod.com.
You can check on line by entering your zip code to see if they 
are  in your area.

If they are available in your area, they are an easy and great way to shop.
I used them all the time until they pulled out of Houston.
Tim and Cheryl use them in Boston.
They charge a small fee and 1 or 2 percent of your order total.
All in all, on an order of about 250 dollars, the fee was under 10 dollars.
That is well worth it to me not to have to go to the store.
If you get something you are not happy with like produce, they will 
take it back at the time of delivery.
they even will help put things away...or at least they did here when 
I used to use hem.

Chicken Tacos with Chipotle Sour Cream

I loved taco night when I was a kid, when it 
meant yellow cheese, seasonings from a packet, 
and machine-molded tortilla shells -- 
essentially, an insult to all of Mexico in one 
convenient box. It is, of course, better to make 
real tacos with sweet fresh flour tortillas.


2 servings

 1 tablespoon extra-virgin olive oil
1 medium red onion, chopped
1/2 red bell pepper, cored, seeded, and chopped
2 teaspoons smoked sweet paprika
2 teaspoons chili powder
1 teaspoon dried oregano
1/2 teaspoon ground cumin
1/2 teaspoon kosher salt
2 garlic cloves, minced
1 medium tomato, chopped
2 cups shredded cooked chicken
6 (6-inch) flour tortillas
2 teaspoons minced canned chipotle peppers in adobo
1/2 cup sour cream
Shredded lettuce
3 scallions (white and green parts), chopped
Crumbled queso fresco (fresh, white Mexican cheese)

1. In a sauté pan over medium heat, warm the oil and cook the
onion, bell pepper, paprika, chili powder, 
oregano, cumin, and salt until the veggies are soft, 7 minutes.

Add the garlic and cook until fragrant, 1 minute.
Stir in the tomato and chicken, and cook until 
the filling is heated through, stirring, about 3 minutes.


2. Warm the tortillas in moistened paper towels 
in the microwave for 30 seconds,

or for a few seconds in a dry skillet over high heat.
Stir the chipotle into the sour cream.

3. Pile the filling into the tortillas, topping 
with chipotle sour cream, lettuce, scallions, and queso fresco.

When I buy lettuce, I don't purchase iceberg...
I usually buy green leaf or romain.
These lettuces have a  nutritional value where as iceberg is 
basically just water.

To store the leafy lettuces, dampen a paper towel...
I will wet one corner of the towel and then wad it up so the rest of 
the towel absorbs the water...

again you want it damp, not soaking.
Wrap the paper towel around the lettuce and replace in the plastic 
bag it came in from the grocery store.


I have had a head that has keep fresh this way for about a week now.

I did that, Katie, and we even looked right by the produce, all to no avail,
and when we asked a person, they said not by the produce, directed us to
where the storage bags are, and nothing, so am checking different stores
around here; I know QVC carries them, but want to search locally,, if
possible; wonder if they come in different sizes; also wonder if Tupperware
has that lettuce storage container.

Sandy, here on post at the commisary those bags are found over by the
produce area.  Just ask some one that works at the store you shop at and
they can show you or tell you if they even carry them.  I have never bought
them, but, know that  is where they are usually always found.  You can't be
shy, just ask for  help from someone that works there.  They will help you

I'm not sure where the Green Bags are located in the store.  They are
good for all kinds of fresh produce.  Put it in the bags dry and it
will keep for quite a while.

[CnD] Top Secret Recipe: Red Lobster Broiled Dill Salmon

Red Lobster Broiled Dill Salmon

1/2 cup melted butter or olive oil
2 tsp. lemon juice
1 tsp. salt
1 tbsp. fresh dill chopped
1/8 tsp. red pepper
4 salmon steaks, cut 1 inch thick (about 2 pounds)

Place melted butter, lemon juice, salt, fresh chopped dill and red
pepper in small bowl and stir to combine.

Preheat broiler.

Place salmon steaks on lightly greased pan and brush with half of
seasoned butter.

Broil, 5 inches from source of heat, 5 to 10 minutes.

Turn heat to 400°F, close oven and bake an additional 5 - 8 minutes.

Brush with remaining butter blend. Serve.

Serves 4

wings.

These wings are a delicious alternative to the common Buffalo
wings we all love.  Cook them on the grill or under the broiler
to get that crispy skin and lock in the juicy flavors.

Sesame Chicken Wings

36 Chicken drumettes
2 teaspoons ground coriander
3 tablespoons soy sauce
2 cloves garlic
3 tablespoons fresh lemon juice
1 inch fresh ginger -- peeled
2 tablespoons sesame oil
1 onion -- quartered
2 tablespoons sugar
1 teaspoon red pepper flakes
1/2 cup sesame seeds (approx.)
2 teaspoons salt

Wash the chicken pieces and pat dry. Place in a bowl.

Combine the remaining ingredients except the sesame seeds in a
blender and puree. Pour the mixture over the chicken and stir to
coat all the pieces well.

Refrigerate for at least 2 hours.

Remove the chicken from the marinade and sprinkle with the sesame
seeds.

Place on the grill or under the broiler for 5 to 6 minutes on each
side, or until cooked through. Serve hot.

Makes 6 to 8 servings.

[CnD] Top Secret Recipe: 5 Star: Urban Tavern's Spice-Braised Pork Ribs

A 5 star secret recipe from one of the best restaurants
in San Francisco.  Urban Tavern is located in the heart of the city
and features a delicious gastropub menu.

Their braised baby back ribs are always in demand.  These
slow-cooked ribs are so tender and richly flavored with an
interesting blend of spices.

To prepare these ribs at home you will need a very large roasting
pan to fit the 2 racks of ribs.
New 5 Star Secret Recipe
=-=-=-=-=-=-=-=-=-=-=-=-=-=

Urban Tavern's Spice-Braised Pork Ribs

Spice rub:

1/2 cup fennel seeds
1/2 cup coriander seeds
2 tablespoons ginger powder
2 tablespoons ground nutmeg
1 tablespoon smoked paprika
2 tablespoons kosher salt
1 teaspoon black pepper
1/2 teaspoon cayenne powder

In a medium sauté pan heated over medium heat, toast the fennel and
coriander seeds until aromatic, about 2 minutes. Remove from heat
and cool completely.

Grind the fennel and coriander seeds to a fine powder using a spice
mill or coffee grinder, then combine with the ginger, nutmeg,
paprika, salt, black pepper and cayenne powder to form a rub.

This makes a generous 1 cup rub, and you may not use all of it for
the final recipe. Store the rub in an airtight jar or sealable
plastic bag in a cool, dark place up to 4 to 6 weeks.

Braised pork ribs:

2 racks pork ribs, preferably St. Louis-style, silverskin removed
Spice rub
1 cup apple cider
2 cups chicken broth
2 cups beef broth
2 bay leaves
Salt and pepper
2 1/2 cups diced apples, about 2 apples
2 1/4 cups diced onion, about 1 onion,
Scant 1 cup diced carrots, about 2 carrots
1 1/2 cups diced celery hearts, from about 1 bunch

Coat the rib racks generously on each side with the spice rub.
Refrigerate, uncovered, overnight to season.

The next day, in a large saucepan, bring the cider, chicken and
beef broths and bay leaves to a boil over high heat. Remove from
heat and season with salt and pepper to taste.

Heat the oven to the broiler setting. Place the rib racks on a rack
over a rimmed baking sheet. Broil the racks until browned on each
side, about 2 to 4 minutes per side, depending on the heat of the
broiler.

Reduce the oven heat to 300 degrees. In a large roasting pan,
combine the diced apples, onion, carrots and celery heart, and
place the seared ribs on top (pour any drippings from the rimmed
baking sheet over the ribs). Pour over the hot broth.

Cover the pan tightly, first with parchment paper, then a layer of
plastic wrap, then with a layer of foil, creating as tight a seal
as possible. Place the covered pan in the oven and braise the ribs
for 3 hours.

Remove the pan from the oven and cool the ribs completely. Skim the
fat from the pan and set the ribs aside. Strain the braising liquid
(we had about 1 quart) into a saucepan and bring to a boil over
high heat. Reduce the sauce by half.

To reheat the ribs, place the ribs in a roasting pan and pour the
sauce over. Place the ribs in a 325-degree oven and heat until the
ribs are warmed through before serving.

Serves 6-8

In the Blind Mice Mart store in the blind Mice Mega Mall,

a bacon cooker is sold for the microwave.
There is a large one and a small one.
The large one holds 7 to 9 slices of bacon.
A smaller one holds about 4 to six slices.
Do a search for Microwave bacon and it will pull both of them up.
These can also be stacked to cook more bacon at a single time.
Both drain off the grease while the bacon cooks.

We will be recording a microwave show featuring the new Magic Chef 
Talking microwave and some of the things I will be doing is cooking 
eggs and bacon in it among some other stuff.

The show will run in about 2 to three weeks.
As the other wonderful members on the list have pointed out, the 
starting point for bacon is about 1 minute per slice.

This varies with the bacon, thin or thick, and with the individual microwave.
Two microwaves with identical wattage will most likely cook differently.
You will need to experiment a little and cook some bacon as the 
wonderful members have  suggested.

When I use the bacon cooker, I line it with a couple of paper towel.
Then, as Brittany and others do, I line up my bacon, about 8 slices, 
and then cover with another paper towel.
I microwave it for 7 minutes and let it stand in the microwave for 
about 4 o 5 minutes more.
Remember, foods cooked in a microwave will continue to cook even 
after it has stopped.

The microwaves are still active.

This method produces the bacon just as I like it, well for microwaved bacon.


Go ahead and grab yourself a plate, line it with paper towels, put 
some bacon on it, and then cover.
Start with the 1 minute per slice and after it is done, let it stand 
in the microwave for another minute.

Then remove it and see where it is at...
If it is too crisp, then reduce your cooking time a little bit...if 
it is not crisp enough, increase your time a little.
After a couple of try you will figure out exactly what amount of time 
is needed for  your bacon.

Plus, you get to eat the experiments!

Hummingbirds eat a variety of different things, 
but the food they are most attracted to in many 
birders’ backyards is the basic hummingbird nectar recipe.
This recipe simulates the natural sucrose content 
of nectar producing flowers and offers the birds 
a healthy source of energy and

calories.

Classic Hummingbird Nectar Recipe
To make hummingbird nectar…

1. Combine one part white sugar and four parts water.
2. Heat the solution for 1-2 minutes to help the 
sugar dissolve and slow fermentation.

3. Allow the solution to cool completely before filling feeders.

Nectar Recipe Tips

• If your tap water contains heavy chemicals, 
consider using bottled or purified water for 
purer nectar. You can also boil the water before adding the sugar

to help purify it.

• Do not use honey, brown sugar, molasses or 
artificial sugar substitutes for any hummingbird 
nectar recipe. Honey and molasses (brown sugar contains molasses
products) are too heavy for hummingbirds to 
digest efficiently and can ferment more quickly, 
creating a mold that is fatal to hummingbirds. Sugar substitutes

do not have the caloric energy that hummingbirds need for energy.

• While boiling will help slow the fermentation 
of the nectar initially, the nectar in 
hummingbird feeders is contaminated as soon as it is sipped by a
bird. Therefore, it is not necessary to boil the 
nectar once the sugar has been dissolved. If you 
use extra fine sugar no boiling may be needed.


• The ratio of sugar and water can be slightly 
adjusted, but a solution that is too sweet will 
be difficult for the birds to digest and one that does not
contain enough sugar will not be suitable to 
attract hummingbirds. The 4:1 water to sugar 
ratio most closely approximates the sucrose levels in natural

nectar.

• Hummingbird nectar must be completely cool 
before filling feeders. Hot nectar can warp or 
crack both glass and plastic hummingbird feeders and warm nectar

will ferment more quickly.

• Commercial hummingbird nectar products may 
advertise different flavors, vitamins and other 
additives that are supposed to attract additional birds. These
additives are not necessary for hummingbirds’ 
health and a simple sugar solution will attract 
just as many birds as more expensive commercial products.


• Unused hummingbird nectar can be stored in the 
refrigerator for up to one week. When making your 
own nectar, adjust the recipe quantity to only make enough

for one week to eliminate waste.

• Clean hummingbird feeders
 at least once a week and refill them with fresh 
nectar. In warm weather or when multiple birds 
are using the feeder, clean them more frequently.

mother, Billy Jo, passed away Tuesday morning.

Her services will be tomorrow, Thursday, at Gibson Funeral Home.
Family visitation is scheduled for this evening.

Billy Jo Lee Stewart, 85, of Lufkin, was born August 14, 1926 in 
Purdon, Texas, the daughter of the late Maudia Mae (Richardson) and 
Jack Wilford Lee. She passed away Tuesday, May 15, 2012 in a local 
hospital. Mrs. Stewart was a loving wife, mother, grandmother, and 
great-grandmother. She was class valedictorian of the Apple Springs 
Graduating Class of 1944. She was a charter member of the Apple 
Springs Old TimersAssociation and a member of Calvary Baptist Church 
in Lufkin. Mrs. Stewart enjoyed ceramics and quilting. Survivors 
include her son and daughter-in-law, Steve and Gina Stewart; 
daughter, Brenda Jones; grandchildren, Christopher Lee and Janay 
Jones and Grant Jones and fianc Diana Shupak; great-grandchildren, 
Kanin Lee Jones, Dustin Shupak and Dayton Shupak; sister, Lynda K. 
Lee Owens and husband Larry G. Owens; sisters-in-law, Oleta Stewart 
and Jacqueline Stewart and husband Carroll; and a number of other 
family members and friends. In addition to her parents, Mrs. Stewart 
was preceded in death by her husband, Charles Ray Stewart; 
brother-in-law, Bill Stewart; and nephew, Ted Stewart. Pallbearers 
will be Christopher Lee Jones, Grant Daniel Jones, Bill M. Stewart, 
Mitchell Stewart, Dayton Michael Shupak and Keith Lewing. Honorary 
pallbearers will be her great-grandson, Kanin Lee Jones; and nephews, 
Tim Stewart and David Stewart. Services for Mrs. Stewart will be held

My question to you is this. Would any of us who are on the list be 
able to tell me where I can get an ear plug that will work for the 
scanner? When I called iInvision America, I was told that a cell 
phone ear bud would work just fine. I tried all my Cincinnati Bell 
ear buds that I have, and the two I have don't even work. Where 
should I take my summitt to get an ear plug that will work.


I was disappointed that one didn't come in my package.

No, the dough bakes the same as far as I can tell...it is much easier 
to work with when chilled.

I did not chill the dough before baking the first batch!
I was like the Cookie Monster!
Mmmm! Cookies!!
I used a soup spoon to scoop out the dough in about 1 and a half inch 
balds, put  them on a parchment paper lined cookie sheet and baked 
for 15 minutes at 350.

They were delicious and curbed my Cookie Monster craving...
I chilled the remainder of the dough and will bake them tomorrow 
morning to take to my in-laws for Easter.

Ingredients:

1 cup shortening
1 cup granulated sugar
1/2 cup light brown sugar
2 large eggs
2 teaspoon vanilla extract
1/2 teaspoon baking powder
1/4 teaspoon salt
2-1/4 cup cake flour
3 cups chocolate chips

Directions:

1. Combine shortening and sugars in large bowl. Beat on medium
speed with electric mixer until well blended.
2. Beat in eggs, vanilla extract, baking powder and salt until well
blended.
3. Stir in cake flour. Stir in chocolate chips just until mixed in.
Shape dough into two rolls about 2 inches in diameter. Wrap tightly
in plastic wrap, and refrigerate for 4 hours or overnight.
4. Heat oven to 350 degrees, Slice dough about 1/2 inch thick.
Place on ungreased cookie sheets. Bake 10 to 14 minutes or until
firm and golden. Cool on cookie sheets 4 minutes; transfer to
cooling racks.

Makes about 4 dozen cookies.

Two things...
it ill need to fit or if you  can really grease up the crock so the 
bread does not stick after it has raised, you could bake a round loaf

and makesure your crock has a warm setting...some only have low and high.
These would be too hot to raise the bread.

I wonder how it would work in a round crock pot.  Has anyone tried this?

 ZANS' CANS CHILI
At our house

 From One Fish Two Fish Red Fish Blue Fish

 Even if you don't have a Zans--and few do because of the 
bans--you should still

try to make the Zans chili from cans.
15-1/2 oz can kidney beans
15-1/2 oz can pinto beans
14-1/2 oz can diced tomatoes with sweet onions and roasted garlic 
or similar

1 lb ground turkey or lean beef
1/2 tsp salt
1/4 tsp freshly ground black pepper
1 tsp paprika
1/4   tsp chili powder, or more if desired
2/3   cup grated mild Cheddar cheese
1/4 cup sour cream
4 sprigs cilantro
 1. Drain the beans and put them in a large saucepan with the seasoned
tomatoes. Bring to a simmer over medium heat, stirring occasionally. 
Simmer until the

beans are heated through and flavors have blended, about 7 to 10 minutes.
 2. Heat a frying pan over medium heat and crumble the turkey or 
beef into it.
Season with the salt, pepper, paprika, and chili powder. Cook until 
browned, stirring

occasionally, about 7 to 10 minutes.
 3. Stir the seasoned meat into the beans.
 4. Divide the chili among 4 bowls. Top each with cheese, then 
sour cream, and

stick a cilantro sprig in the middle.
 Makes 4 servings

 BLUEBERRY BUMPLINGS
Donuts,dumplings, blueberry bumplings,
Chocolate  mush-mush, super sweet.
Clam  stew, ham stew, watermelon wush wush,
Oh,   the stuff that I could eat!
 From The Cat in the Hat Songbook

 The Cat's bumplings are plump things surprisingly like 
blueberry scones, just

right for breakfast or snacking.
2-1/4 cups all-purpose flour
1/3 cup sugar
2 tsps baking powder
1/4 tsp salt
4 ozs butter, softened and cut into small pieces
1/2   cup fresh blueberries (1/2 cup frozen may be substituted)
1 large egg
3/4 cup half-and-half
 1. Preheat the oven to 400F. In a large bowl, combine the 
flour, sugar, baking

powder, and salt.
 2. Add the butter and mix well with your fingertips until 
crumbly, then add the

fresh blueberries. (If frozen, add them after step 3.)
 3. In a small bowl, mix together the egg and the half-and-half, 
then quickly beat

into the flour mixture. Do not overwork.
 4. Pat the dough out between sheets of wax paper or plastic 
wrap until about

1/4 inch thick. Cut into 2-inch circles, squares, or triangles.
 5. Place the cut-outs on a baking sheet, non-stick or lined 
with parchment

paper, and bake until golden on top, about 10 minutes. Serve hot.
 Makes about 12 bumplings

THE REAL NAME OF STAR FRUIT IS CAREMBOLLA FRUIT.
WHEN SLICED, IT LOOKS LIKE A STAR.
THIS GROWS IN ST CROIX, US VIRGIN ISLANDS. I HAVE PICKED AND EATEN 
ALONG THE ROADSIED WHILE VACATIONING IN ST CROIX.

IT WAS VERY REFRESHING WITH A SLIGHT CITRUS FLAVOR.

Carambola (Star Fruit)
Scientific Binomial Name: Averrhoa carambola
Information
Usage: Eaten fresh, in salads  juiced. Tart variety is used in jams.

 Also called Star fruit, good-quality Carambola is fairly firm, and 
the skin will be yellow with no green tinges. Slight browning along the edges

is normal. There are two varieties - sweet and tart.

Avoid: Avoid product that is soft, blemished or has excessive 
browning along the edges.

Available August through February. Production is centered in Florida,

[CnD] CND Show Recipe: Chocolate Chunk Cheesecake

Howdy Ya'll,
Here is the recipe for the next cooking in the dark show...
It is awesome!
This will be going out Thursday to all our radio affiliates.

Chocolate Chunk Cheesecake

1 cup (12) crushed crème-filled vanilla cookies
(Note: I used chocolate graham crackers, and used about 1 and a half cups)
 2 T margarine, melted
Note: I used 3 T melted butter
Or you can do like I do and buy a graham cracker crust already made.
Probably should buy two as the recipe overfills one.

3 8-oz packages cream cheese, softened
½ cup packed brown sugar
1 tsp vanilla extract
4 eggs
1 8-oz milk chocolate bar, chopped
Directions:

Combine crumbs and margarine; press onto bottom of 9-inch springform pan.
Bake at 350 degrees for 10 minutes.

Combine cream cheese, sugar and vanilla mixing at medium speed on an
electric mixer until well blended.  Add eggs, one at a time, mixing well
after each addition.  Stir in candy; pour over crust.  Bake at 350 degrees
for 45 minutes.  Loosen cake from rim of pan, cool before removing rim of
pan.  Chill.  Garnish with strawberry slices, additional chocolate, melted,
and mint leaves if desired.
I garnished with shaved chocolate

[CnD] Everyone Read! Purpose Of Cooking In The Dark

Howdy All,
When this list started, it was to  be used as an aid and teaching 
tool dealing with cooking.
This covers a huge range of topics...a lot larger than just trading 
recipes back and forth.

They include everything from getting the food to cleaning up afterwards.
Tips, Ideas, Strategies, how to questions are all welcome and encouraged.
I remember what it was like when I first lost my sight...
The unknown scared the hell out of me.
Getting information on how to cook and be independent in the kitchen 
was hard to come by...I had lots of questions and no where to find the answers.

This list is intended to change all that.
Topics about grocery shopping, labeling food items, cookware, and 
products, food storage and prep, how do I do something...cleaning up 
afterwards...are all welcome here.

As long as it can be related to cooking the topics are welcome.
Now how to download a file on a computer or how to wash clothes, 
vacuum a floor, etc are not for this list.

Jessica, the questions you want to ask,
She wrote: I was going to ask other questions like how to load and 
unload a dishwasher and how to make food look good when you are going 
to be serving it to a bunch of people and how to tell wen all of the 
ingredients are mixed in to the food properly and lots of other stuff as well.
These  are perfectly fine here...Everyone on this list should stop 
and put themselves in
the other person's shoes and just think about what that person 
is  really needing help...it is hard enough to  get up off the couch 
and start living life as a blind person.
We should applaud everyone that does this and wants to learn how to 
do things in the kitchen as a blind person.
Everyone on this list has different skill levels in the kitchen and I 
love it when we help each other!

Now, how about getting Jessica some answers to her questions?
How to load a dishwasher?
How to present food to a large group of people?
How to know when the ingredients are mixed in...I get my hands in it! 
Feeling around in the mixed ingredients ill tell you allot.
I fell around the edges of the bowl above the mixed portion when 
doing whet ingredients, feeling for dry mix that is not in the wet mix part...

Get your hands in it and feel around!
food presentable when serving?
Great information and awesome support...and fabulous recipes.
Not to mention the wonderful cast of characters we have on this list...
it all equals Cooking In The Dark!
Let's not lose sight of what this list is here to do...no pun intended!
Now, If anyone has a question or a problem about what someone else is 
posting, contact me or steve off list.
Forward us the message and your concerns about why you don't think it 
should be posted to our list.

[CnD] creamy garlic and potato soup!

Howdy,
I made this evening to fight the cold temps in Houston!
It was delicious!
That awesome little Whisk-It worked great for mashing up the potatoes 
in the pot!
I also added about a cup of sliced mushrooms and used 4 potatoes 
instead of the 2 mentioned in the recipe.

Cooking In The Dark
creamy garlic and potato soup!

Ingredients:

3 Tbsp. olive oil

6 garlic cloves, minced

1 onion, diced

1/2 cup celery tops, diced

1 pinch of chile flakes

8 cups beef broth

2 whole russet potatoes, peeled and sliced thin

1/2 tsp. salt

2 whole carrots, sliced thin

Salt and pepper to taste

Chopped parsley

Directions:

Heat olive oil in a large pot. Add the garlic, onion, celery, and chile

flakes. Saute gently for about three minutes. Add the broth, potatoes and

salt. Bring to a boil, then reduce heat and simmer for 30 minutes. Remove

half of the vegetables and puree. Then add back to the pot and bring to a

boil again. Add the carrots and cook until tender. Remove and season to

taste. Garnish with parsley. It's simple and easy.

1 1/4 cups apple cider

1 1/2 cups all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/2 cup unsalted butter, at room temperature

1/2 cup granulated sugar, plus 3 tablespoons for rolling

1/4 cup packed light brown sugar

1 large egg

1/4 cup plus 2 tablespoons finely chopped red and green crispy apple chips,
plus whole chips for garnish

2 teaspoons apple pie spice

Directions

Preheat the oven to 400 degrees F.



Heat the cider in a medium skillet over medium-high heat until it comes to a
boil. Continue to cook until syrupy and reduced to about 2 tablespoons, 12
to 14 minutes. Set aside to cool slightly.



Whisk the flour, cream of tartar, baking soda, cinnamon and salt in a medium
bowl until smooth. Beat the butter with 1/2 cup of the granulated sugar and
the light brown sugar in a separate bowl on medium-high speed until fluffy
and smooth, 2 to 3 minutes. Beat in the reduced cider and the egg (the
mixture may look slightly curdled). Stir in the flour mixture and 1/4 cup of
the chopped apple chips until combined.



Stir together the remaining 3 tablespoons of granulated sugar, 2 tablespoons
of chopped apple chips and the apple pie spice in a small bowl. Roll heaping
tablespoons of dough into balls, using lightly moistened hands if the dough
is too sticky, and then roll in the spiced sugar mixture. Place the dough
balls 3 inches apart on ungreased baking sheets and top with a few pieces of
whole apple chips. Bake until the edges are just set but centers are still
soft, 11 to 13 minutes, rotating pans halfway through the baking time. Cool
2 to 3 minutes on the baking sheet, and then transfer to a wire rack to cool
completely.

[CnD] Hot Chocolate Mix

Hot Chocolate Mix

makes 3 3/4 cups mix; 15 servings

2 cups nonfat dry milk
3/4 cup sugar
1/2 cup unsweetened cocoa
1/2 cup powdered nondairy creamer
1/8 teaspoon salt

In a large bowl, combine all the ingredients; mix well.  Store in an
airtight container.  To make a mug of hot chocolate, simply place 1/4 cup of
the mix in a mug and add 3/4 cup boiling water; stir to blend.

I remember when I was living in my old apartment back in 1981 when I 
started living on my own that I made oat meal in a coffee cup. I 
learned the hard way that you don't put water and oat meal in the 
same cup and boil in the microwave. The oat meal expands, and it 
goes in your microwave oven. It makes quite a mess. It's better to 
boil your water, then add the oat meal after that. That works best.

What kind of oatmeal? When making instant I just heat the water for three
minutes and the add oatmeal and other ingredients. A lid or one of those
covers Dale talked about on a recent show might help, as would a larger
container, as I suspect it's bubbling over during the cooking process.
