can I simply switch off the grid-setting for the toc? That would be the
easiest.

I get a strange effect. If i use \placecontent all is as expected, but if I

I think you can achieve what you want by using \placelist[chapter,section]
instead of \completecontent. Then you can start the TOC by
\startchapter[Content] \placelist…. \stopchapter. The same approach can be used
for other lists/indexes.

If your question is of interest to others as well, please add an
easiest way of getting the three desired results.
Your own headings aren’t shown in the TOC because you use \completecontentwhich
lists only the default numbered headings (\part, \chapter etc.)
There are different solution:
1. Replace \completecontent with the following
