Judith, Puffed millet SOUNDS like a good idea. However, having learned how all puffed grains are made, I wouldn't advise it. Each grain is forced through a machine that subjects it to so much pressure, the molecular structure is actually CHANGED. It's not simply a matter of pumping a grain full of air--two groups of mice given unaltered grain and vitamins in water, respectively, lived far longer than a third group of mice given puffed grains. So, in other words, the puffed grains are actually BAD for you. Sally Fallon, author of *Nourishing Traditions,* cited these studies, and I trust the source.
