If you haven't already, I'd check that earliest system usable on the C500. It's possible that it needs 7.5.5 at minimum or something even more recent. Kennedy's site probably has that info.
Another possibility is if you have a G3 upgrade installed it could be confusing the installer. If that's the case, try putting the original 603 processor back in.
