Have you tried loading both 24/192 albums onto a SD card and playing them using TinySC? I don't think the Touch has an issue with playing them.
When I had stuttering issues on my server I uninstalled LMS, getting rid of all the cached settings, and then doing a fresh install. That cured my problems. My server, however, is running on a low powered NAS (Zyxel NSA310).
