If I were looking at the University landscape today, I'd be torn too. A serious university will give you some serious skills, and a clear advantage. But piling up $80k before you have a job, is daunting. I'd seriously consider a community college or UVU. Regardless, you'll have to work like crazy to get some real experience. So, yes, get in on some projects. Try to become an intern or donate for a non-profit.
The problem is that the people graduating from these popup universities like Phoenix, aren't getting great skills. But they are getting great debt. It's all about collecting money, much more than educating. I think they're being ripped off, and they're being allowed to get away with it. I think for sure this is the worst choice you could make. I've worked with some guys who did not have CS degrees, but were better than some other guys who did. He just didn't have the money.
