Probably the open beer keg you have in the fridge will last longer than an unopened one you keep at room temperature! Since you fill the keg with CO2, there are no problems with oxidation. Of course, a good beer is a living thing, and will develop, mature, peak, and deteriorate on its own speed. This is a matter of many weeks (for light pale ales) to many years (for strong, dark beers).
