Let's take these one at a time:

From the slot loading iMacs forward, you can use airport cards and
airport software. You don't mention what kind of wireless router you
have, but you should be able to use it. You may not be able to use
the security features though. If you go with a tower model, they
will have PCI slots. Your Linksys card may be a PCI card, so it
might work. Here's a chart that might be helpful to you:

you can scratch out a lot of them because under interface, they are
pcmcia or cardbus, that's for laptops. Some of the Linksys 802.11g
cards have broadcom chips and not only will plug into a pci mac, but
the airport software can control them. Really sweet. That's
actually what I use.
I speak to barbie.com or disney.com What do the spec on those pages
say is required as a minimum.
use a notepad or word type program to type documents
Hehe. Well, an original Mac that's 20 years old could type on some
sort of notepad program. Even newer machines running 9 could run
Word for Mac, in addition to Word for OSX.
use educational games such as jump start, etc...
Do you already have the games? Are they Windows or Mac games? If
for Macs are they 9 or X games?
I have a good working PC monitor, keyboard and mouse, also a mac
keyboard
and infared mouse from the dead Bondi.
You may need an adapter, depending on what you get. But the monitor
should work. It's probably VGA. Some of the older like Beige G3s
have the old style adapters with two rows of pins. You'd need an
adapter. Blue and Whites used ATI Rage 128 video cards which had VGA
ports. The PC keyboard and mouse may depend on how old they are, and
hence the interface. If they're USB, sure you can use them. You can
certainly use the Mac versions, unless you get something as old as a
Beige, but even then you can add a PCI USB card.
The aformentioned linksys card, a
CD-RW/DVD,
internal? I don't really know. I'd look up the model and see if the
interface works as well as drivers.
and some misc 128 mg pc100 and pc133 chips.
Probably not a problem Certainly beginning with Beige G3s, they used
pc66 RAM, but you can always go down. That is you can use PC 133 in
PC 100 slots. Some of the machines get a little wonky about
density. Also, the newer machines take a difference kind of RAM.
Look at the specs at low end Mac.
Will any of these
things work with a mac machine, and if so, what am I looking for?
I'd look at B&W or early G4 tower. You have a lot of parts that will
work.
For that matter, what is the least expensive machine I can get used
that
that will do all these things until I can afford to get her a better
machine? or a new machine?
I'd go with a slot loading iMac or a B & W Tower or newer.
