It could be your drain field is clogged up too, even if you pump the tank it's not going to drain once full again.  I had to replace mine a few years ago, tree roots like to work their way into the drain pipes

One other thing, at this house I have no idea where the tank is exactly or the
location of any clean outs if they exist. At our other house I can actually
pull the lid to the tank and have a look when I feel like looking at poo. Also
right next to the house is a pipe sticking up with a cover on it that is
supposed to pop off if it backed up. If there was such a pipe, clean out here I
could pull in and would know right away if it was a septic backup or not.
Surely there is one around here but maybe a house this old does not have one?

Well it is raining and cold but I climbed up there and it looks clear to me. As
far as I know the septic is in the back of the house, and the toilet on that
side seems to have a normal level in it but when you run the tub it does not
drain very well and you get the gurgle. The toilet on the front side of the
house has a high level and is not draining at all. If you run that tub it does
not drain or drains very slow. Also the roof vent is on this side of the house
opposite the side the drains exit the house. None of the water appears to be
sewage backed up. The wife already has a septic guy coming but I’m not really
sure that is the problem. I will day it being 4 or more years since it’s been
pumped it’s probably about due for it anyway. If that does not work I guess I
either need to call somebody or rent one of them snake machines.

Exactly, just take a look, maybe tie a flashlight to a string and drop it down

Easiest first, don't over think.
