I suppose another workaround is to switch to using wireless for the Touch instead of ethernet. It's less than ideal, but if the wifi signal is good it should comfortably provide enough bandwidth for lossless streaming, especially as the server will still be wired to the router. -

Have you tried ssh'ing in to the Touch and Radio to set the time correctly via the command line, and then seeing if that sticks? Or, if you're pretending to be in another time zone on mysb.com, why not go all the way and pretend to be in that time zone in real life :-)

Erland's CoverFlow applet will act as a screensaver, but not as a UI on the Touch for browsing albums. If I remember correctly, he looked into incorporating album browsing, but found he couldn't get it to work smoothly enough on the Touch to be worthwhile.
