I'm one of the people who would like to see device-specific controls for the data options. Part of that stems from the fact that I don't like having my Firefox on Android awesomebar flooded with crap from my desktop Firefox. Syncing right away means I would probably see the crap even though I want to remove it. I don't think my issue here should block us moving ahead, but I wanted to be sure that you understood why syncing everything is a turn off for some people.
