My suggestion is to get rid of the apps you no longer want or need, download the apps you want, do a backup of your old phone and then upgrade using what's backed up. Ideally doing an encrypted backup using Itunes lets you move more things like passwords, etc, to your new device.

I double checked my settings under General/Keyboard. I have both autocorrect and predictive text off, but I have Check Spelling on. That way it alerts you to misspelled words and you can use the rotor to find them and manually correct it. For what it is worth, I also turn off smart punctuation.
