For data center work I often use my Etymotics in ear monitors with ordinary hearing protector ear muffs over them. Very comfortable. While the Etymotics are not bluetooth, you may want to consider some kind of noise isolating in ear combined with generic earmuffs.

Fortunately for my wallet, I never needed them that badly (except twice
on IBM support calls) and now I'm not on the hardware side any longer.

ear-muff style headset for data center work.
