If you connect the computer to a line out channel (like the record out for a tape deck), the volume control is irrelevant, as that only controls speaker and headphone outputs. The line level will be set by the input, and the level from a turntable is unlikely to damage anything.
At least that's what they say, I still hook a Powerbook up to my stereo for recording.
Which also works, because the stereo provides the amplification needed, but is not without risk. Accidentally sending too powerful an audio signal using that method can blow your sound card and potentially damage your computer. It can't be stressed enough: if you're going to plug a stereo directly to your Mac, keep the volume LOW.
