products allow you to keep track for version changes and who changed it

Whilst I wouldn't disagree with you, bear in mind the original poster stated that he
was moving a lot of mailboxes to a new server, one of the rare conditions where
running eseutil is an option! (assuming, of course, that either the person knows what
he/she is doing or they are hand-held by PS
You could always take the backup and restore it to your recovery server.
You can then export the public folders to PST, which can then be put
back into your live system.

No real problems at all. We've discovered one small issue with SP2 that
really won't affect most people; it's to do with low-bandwidth
installations, where we're seeing extra traffic generated by services
that wasn't there in SP1. SP2 has so far been stable and reliable...

Go ahead should not be any problem , but plan for the Possibility of any future server sizing .Rest it should be fine to run the same on a Server
