You're right on the celery and I feel the same way you do about
ending up wasting some. I've found that if you cut off the tops
of each stalk and a couple of inches at the bottom of each stalk
and then wrap them in foil, the celery keeps for several weeks.

That's the problem. I can find out how many servings, but it
doesn't tell how many cups of dry cubes
