app purchases doesn't work on my iPhone 8. Apple accessibility
doesn't know why this is. I never have to enter in my apple ID, but
my password is required for the first app purchase, then I'm password
free for the next

Being required to enter the passcode, yes, but Apple ID and Password, no.
Either the ID isn't completely setup or there is something off with the Touch
ID and Passcode settings.

The Apple ID has to be an email address because all the communications
through Apple with be done through it. If you create a new Apple ID in iOS
11 or later, you might be able to use your mobile phone number as your
username in some countries or regions. Example : If you live in China
mainland
If that is so theoretically the actual Apple Id could be something else as long
as there is an email address associated, but that is not the case, it has to be
an actual valid email address.
