You would have to sign in on her gmail account on the web to enable iMap I
believe, or to check and see if it is there.
I believe you can also dig into the account settings on the phone mail settings
and tell, but I'm a little foggy on that point.

I know folks get used to a particular mail app but I'd recommend you try
Outlook for iOS. I'm still running iOS 14.8 but I'd be curious if the Outlook
app under iOS 15 does the shenanigans you're describing.
