I run the same server as you under WHS and connect my Touch over wifi. I have absolutely no issues in terms of connectivity or reliability of streaming. My original plan was to use a network lead to connect the Touch to the router but the wifi worked so well I never bothered to do it. Would suggest you go for the easiest solution first. You can always adapt IF necessary.
