A hard refresh seems to solve the issue (ctrl+shift+browser refresh
button). The problem is having to deal with it every time changes are
made.

It seems to happen when the generated .js files cached on the client
are out of sync with what's on the server. Column's are treated as
arrays in the js, so when what's on the screen doesn't match what the
server is sending, ugly things start to happen. The errors that start
with 'Caught Exception' are the best indicator of this in my
environment.
