Soak most beans in three times their volume of cold water for six hours before cooking. (You can cook beans without soaking, but it takes longer, and some people think the beans taste better when soaked.) Step 3 Drain and rinse the beans, and then put them in a large pot. Add water to come an inch or two over the beans. Do not add salt! Putting salt in the beans will prevent them from softening. Other beans are yellow eye beans great for new england style baked beans. for me, I have a laptop so I'd need the apex for travel almost like a pda. I was looking at the voice sense -- and having to lug a display around is not very travel friendly. We won't discuss the packmate...and I'm not sure what other note takers are out there. I haven't been impressed with the latest humanware updates to the BN. As a matter of fact, I'm still runnint 7.5 -- but for the smaller size I'd upgrade. I need to work that out with the division of Blind services down here in Florida, but as I'm a VR client with previous employment history looking to get back to work and with good justifacation I think that can be worked out. Besides, I like the idea of them starting with a stable product. That always drew me to them before they became humanware. I have one crockette that is 1 and 1/2 quarts. Also, you can cook the smaller recipes in a larger crockpot. I have a 3 and 1/2 quart that is fine to do this with. You may have to adjust the cooking time, though. You may just have to try it and wee. [CnD] split pea soup
Here is a recipe that should give you a place to start. I don't care for split pea soup done in the crock pot because the peas never seem to break down and I like my split pea soup thick. I just would follow this recipe (use some ham or smoke turkey wings or legs in place of the ham hock) but do in a pot on the stove. ham and split pea soup crock pot 8 cups water 4 large carrots cut into half inch pieces 3 stalks celery cut into half inch pieces 2 bay leaves 2 garlic cloves crushed with press 2 smoked ham hocks about 1-2/3 pounds 1 pound dry split green peas picked over rinsed and drained 1 onion chopped half teaspoon thyme 2 tablespoons lemon juice in crock combine everything except lemon juice adding 1 tablespoon salt cook low 8-10 hours high 4-5 hours Remove ham hocks discard bay leaves, when ham hocks are cool enough to handle remove skin, fat and bone Cut meat into small pieces and return to soup stirring in lemon juice love lightens all difficulties and sweetens all bitterness. --- St. Francis --- Scanned by the Barracuda Spam Firewall at CPWS Broadband ___ Cookinginthedark mailing list Cookinginthedark@acbradio.org http://acbradio.org/mailman/listinfo/cookinginthedark

There's a new Hamilton Beach one I got from Wal-Mart. It has a base, one lid, and 3 sizes of pots, 2,4 and 6 quart. You choose the size of pot you need, and there are 3 buttons on the front of the machine as well as a knob. Going from left to right, the buttons are 2,4 and 6 quart, so you press that right away. Then I believe the settings on the knob are off, warm, low and high. It's heavy, but good.
