Happy Thanksgiving, Dale Campbell If you are getting crispy edges, you are cooking at too high a temperature or over cooking the egg. Most likely your skillet is too hot. . Reduced your heat to at least medium if not medium low. Sprinkling a little water over the egg after putting in the skillet and covering will help steam the egg as it cooks. I use just a little butter, about a half a teaspoon to help keep eggs from sticking. After your skillet is hot, drop a little butter in he skillet and swirl the skillet around to spread the butter over the bottom of the skillet. Now break your egg in the skillet, run your fingers under the faucet to get a little water on them, and then let a few of the droplets of water fall into the skillet over the egg. Cover and let the egg cook for about 2 minutes... If you want to turn it, now is the time... Then let it cook for about another 1 to 3 minutes, depending on how hard you want the yoke. I like mine a little runny so they can be mixed up with has browns! Yummy! Try applying very gentle pressure with a finger on top of the egg before moving the egg itself. Try this, pick the skillet up and move the skillet over the bread. Your egg needs to slide out of the skillet and fall on the bread; the egg needs to be cooked medium or firmer. A tad bit of water prevents the egg sticking to the skillet. What temperature do you cook sunny side up eggs at? How much is "a little bit of water?" And how long do you leave them in the pan? I like my egg set, but my yolk liquid enough to mix with the rice. I can't seem to manage this. If you don't have egg rings you could try using a drinking glass top to punch a circular hole in the center of a slice of bread. Once done, put the cut out slice in the pan and crack an egg and have the egg go right into the circular hole in the bread. The circle of bread in the glass can be toasted in the pan too and give it a few minutes then you can flip the slice of bread over and if the egg is cooked enough on the bottom it will not fall out of the bread. These are known as one-eyed sailors or toads in the hole and maybe have other names too. I do this since even greased egg rings I've made from tuna cans in the past have rusted and I prefer to not have rust coming off into my cooking. I flip the rings with the spatula, as that gives me more control. I remove the rings when I take the eggs off the skillet and place them on the bun, which makes it easier to center them. Most of the time that's not a problem for me. After I've melted the butter in my pan, I just crack my egg over the center of the pan. If I'm frying more than one, then I crack one egg on one side and the second on the other. It's just a matter of putting the spatula in the pan against a side you didn't use and holding it straight up and down. Flaten it, and get one of the eggs on the spatula by sliding the spatula under it. If something happens, and I'm not sure where the egg went, a quick light touch or two would suffice to find it. I always have my plate as close to the pan as possible, so there's no nonsense about carrying the egg far on the spatula. Years ago about 30, I think, I used to have a spatula with little sides on its right and left edges. I lost it. The other possibility is to find a place that sells egg pans that are shallow, small frying pans. At the very least, find a smaller frying pans for your eggs. pay very close attention to holding the spatula level when your egg is on it as you move your egg to the very nearby plate. Hello Brenda or anyone else who can possibly answer, I have tried the fried eggs in the pan with the lid over the top many times with great success. But where I find I'm having difficulty is getting the eggs out of the skillet and onto the bread in one piece. I use the largest spatula I have for this task but still the eggs sometimes manage to fall off the spatula between pan and buttered toast or bread, sometimes back into the pan and sometimes on the counter top or stove top. Does anyone have any possible fixes for this problem? I think if I knew a good way to get fried egg from skillet to sandwich I'd make fried egg sandwiches all the time, but I am deterred by my lack of ability to transfer egg to bread or toast or plate or bagel or what have you. Any help would be greatly appreciated, and thank you in advance. I just melt down a bit of margarine to fry my eggs; no water is needed. I use a touch of salt when I serve them. My mom used to ad a dash of pepper to her salted eggs, but I prefer to skip the pepper. When I make fried egg sandwiches, I always butter my bread and use two eggs, yokes and all. I call them my two fisted sandwiches, because it's best to use both hands to pick up a sandwich and eat it. I don't grease mine, but they're non-stick so I don't have to. And when using them I use my big round spatula to flip the eggs. I haven't tried them yet. I would imagine though, you could probably use a bit of water, or Pam cooking spray, in your pan, what ever you prefer. When you heat the pan up good, put your butter and egg in, put the lid on and turn the stove down to simmer, you'll be able to cook the eggs without flipping. I put a couple teaspoons worth of water in before putting on the lid. ... and nothing wrong with crispy edges; I like them. I prefer my version of fried eggs on the harder side anyway. I flip the egg, then pop a large piece of precooked sausage in the microwave, drop a piece of cheese on top of the egg as it gets done and then drop the sausage on it, take them out of the pan, and slide them on a bun with mayo on both sides with a leaf of lettuce and a slice of beefsteak tomato and make a great breakfast sandwich.
