I'm not testing it in the moment, but my experience has been that if there's only one app left in a folder the folder will disappear on the home screen and just be replaced by the single app. Maybe it no longer behaves this way, but that is what I do recall, so my recollection agrees with yours.

After it says to choose a destination you just go where you want the normal way, and if it is a folder you want the app put into, you touch the folder, flick up until it says put app in folder and double tap. Or, flick up and it says put app before x app, etc. It is amazingly smooth moving apps
