I can sort of answer some of your questions.
You need to get into an edit field such as the search field. Now use the roter
to get to typing mode. Then swipe up and down to switch between the two.
Putting apps into folders is very tricky on the iPad. It takes a lot of
practice.

sidebar that add on to the screen of a program. often found on Skype for IPad,
where you can have the main home screen, and if you double tap on certain
thing, say starting a conversation with someone, a sidebar occur.

Well, I don't know how long iPads last on the average but somebody is still
using my iPad 1 that I got when iPads first came out and somebody else is still
using my iPad 4 which of course isn't nearly as old. I imagine there would be a
lot of variables.
