Yes you can, if your eMac has a mic-in port.

I would caution you strongly, however, to keep the volume level on the cassette player very LOW. The sound coming from it is already amplified, and there is a risk that you could damage the computer if you attempt to pump too much amplified sound into that port.

There are a variety of programs that will record your incoming sound into a AIFF file, from which you can use iTunes to convert it to MP3. Among other programs, Sound Studio, Amadeus II, Line In, AudioRecorder, Audiocorder OSX, Jasmine, AudioX, Cacophony, Audacity, Spin Doctor (part of Toast), Peak, Audio Hijack, Wiretap and many more can record incoming sound.
