The settings for the display resolution and the size of menu fonts are
adjustable.
A higher resolution or a smaller font will help. Go to Control Panel /
Display. Of course these settings affect all applications, not just Finale,
but it may be your only option.

If I export EPS pages and have 'include fonts' checked, Finale does the
export then immediately closes. If I do not check 'include fonts' it does
not close.
(And of course the resulting files cannot be opened by GhostScript with the
fonts included but that is old news.)

I don't understand executable shapes, but I can confirm the behavior that
you observed and reported. After playback the slot for the shape in the
executable shape selection box is empty. Looks like a serious bug to me.
