I have had a similar stout. OG over 1100, FG pretty high too. Aggressive
taste, lots of black stuff. Brewed on the infamous Brewferm dry yeast.
Instead of throwing it out, I let it wait. A year later it won silver in
DM. Just had a chance to sample the last existing bottle, at 18 months
of age. Still powerfull, but smooth and pleasant. So, do not hurry to
drink your stouts, let them mature.
