This is my experience too. I have brewed beers with absolutely minimal
amount of aeration, when I have been afraid of infections. I have even
cooled them down in my brew pot, with the lid on, and opened just enough
to pitch the yeast in. No shaking, no stirring, no nothing. And still it
turned out to be quite good beer. Last time I did this was with my
Munchner Experiment, OG about 1050 (if I remember right, see H-29 in
beercalc), and FG 1.009 (last I measured yesterday). I admit it is not a
really heavy beer, but it shows that something can well happen without
much aeration.
