[CnD] Broccoli with Toasted Sesame Seeds

2012-11-13 Thread marilyn deweese
Broccoli with Toasted Sesame Seeds

2 pounds broccoli
One quarter cup butter
1 Tbsp. soy sauce
2 tsp. sesame oil
1 clove garlic, minced
2 Tbsp. sesame seeds
Salt and pepper to taste

Cut broccoli florets into bite-sized pieces. Cut off the bottom inch of the
stems, the peel the stems and cut into thin slices. Blanch broccoli by placing
in a saucepan and covering it with water. Bring water to a boil and cook for
just a couple of minutes until broccoli is crisp tender. Drain off water and
add butter, soy sauce, sesame oil and garlic to the saucepan and cook for
several more minutes. Add toasted sesame seeds and salt and pepper. You may
toast the sesame seeds by placing them on a baking sheet and placing them in
the oven on 400 degrees for several minutes until they turn golden brown.

The Skinny: Use low sodium soy sauce.

I use a 2 quart casserole dish for one recipe, but I have doubled and
tripled it and used a 9 by 13 inch baking dish.

If you wanted more than that, if you have a lasagna dish, that would work as
well.

Hi. This recipe sounds yummy. My sister in-law that unfortunately
passed away a few years ago, spent many years making a similar dish as
this
one every Thanksgiving. She called hers scalloped corn. But, this one
sounds
good however, I have two questions about it. This sounds like a small
batch,

what size casserole do you use? I'll probably triple it if I make it for
Thanksgiving. Thanks.

I also use a spoon and I use the tip of my index finger to make sure that
the frosting is at the edge. Touch it very gently though, or you'll leave a
finger print. I don't care when I'm frosting it just for me and my
roommate, but if I take it somewhere, then I try to be more careful.
Sometimes, since my roommate has sight, he does it for me.

MOM'S WEST TEXAS CHILI FROM TRISH!

I HAD TO GIVE THE CHILI A NAME AND SINCE IT WAS WHAT MY MOTHER MADE ALL MY

YOU WILL NEED...

1 LB LEANEST HAMBURGER MEAT (I BUY AT KROGERS LAURA'S BRAND OF HAMBURGER AS

IT'S THE LEANEST AND SINCE I AM NOT A FAN MUCH OF RED MEAT I CAN'T STOMACH

THE FATTIER BRANDS)

1 15-OZ HUNTS*PREFERRED BRAND STEWED

TOMATOES

1 SMALL WHITE ONION CHOPPED IN SMALL SIZE PIECES

1 15-OZ CAN *HUNTS TOMATO SAUCE

1 15-OZ CAN *RANCH STYLE BEANS

2 TBS CHILI POWDER*LAWREY'S OF COURSE

1 TSP SALT

METHOD...

IN A LARGE POT OR DUTCH OVEN BROWN THE MEAT AND ONION TILL DONE. IF YOU BUY

THE LEANER CUTS YOU WON'T NEED TO DRAIN ANY EXCESS FAT OFF.

THEN ADD ALL REMAINING INGREDIANTS AND STIR TILL BLENDED AND COVER AND

SIMMER FOR ONE HOUR.

THAT'S ALL THE RECIPE. I WAS THE ONLY ONE DONE WAY BEFORE ALL THE OTHER

CONTESTANTS AND I HAD TO PREPARE IT ON TOP OF A COLEMAN CAMP STOVE WITH

BUTANE TO HEAT IT..

WE ALL WORE THE LAWREY'S APRONS AND BOLO'S IT WAS INSIDE THE BRAILLE

INSTITUTE CENTER IN LOS ANGELES. THERE WERE REPRESENTIVES AND CONTESTANTS

FROM ALL THE OTHER CENTERS AROUND THE STATE THAT HAD WON. I HAD A VOLUNTEER

TO ASSIST ME. I REMEMBER THE LADY NEXT TO ME WAS PUTTING CABBAGE IN HER

CHILI AND WAS DERN NEAR PROUD OF IT TOO, EVEN IF SHE HAD NEVER WON ANY OF

THE COOKOFFS. H, WONDER WHY??

ANOTHER MAN SAID HE PUT ARMADILLO MEAT IN HIS CHILI YUK!

I WAS AFRAID MINE WOULD OVER HEAT OR DRY OUT SINCE IT DIDN'T TAKE AS LONG AS

EVERYONE ELSES DID..

BUT IT FARED WELL AND I BROUGHT HOME THE PRIZE. YOU SHOULD HAVE SEEN THE

LOOK ON MY SON'S FACE WHEN I CAME IN WITH THAT MICROWAVE HAHHAHAH

HIS MOUTH WAS ALREADY DROOLING OF THE CHIPS AND CHEESE HE WOULD GET TO MAKE

FOR HIS SELF AGAIN,LOL

NOW WHEN THIS STUFF IS DONE SIMMERING FOR AN HOUR, I SERVE IT IN BOWLS WITH

CRACKERS AND I EAT MINE WITH A GOOD DOSE OF CATSUP ON TOP. THE REST OF MY

FAMILY EAT THEIRS WITH CHEESE ON TOP AND ALL OF US CRUSHED THE CRACKERS UP

ON TOP OF THE CHILI AND DIGGED IN..

NOW SOMETIMES, I MADE CORNBREAD AND CRACKERS BECAUSE SOME DON'T LIKE

CORNBREAD..YOUR NOT AMERICAN IF YOU DON'T LIKE CORNBREAD!

BUT I SOMETIMES MADE A FRETO PIE WITH LEFTOVERS IF THERE WERE ANY AND THAT

WAS REAL EASY JUST USE THE LEFTOVER CHILI AND PUT IN A PAN TOP WITH FRETOS

AND CHEESE AND BAKE JUST TILL HOT AND BUBBLY AND THE CHEESE IS MELTED..

[CnD] Basic Muffin Recipe - Easy Plain Muffins

2012-10-25 Thread marilyn deweese
Basic Muffin Recipe - Easy Plain Muffins

The key to making great muffins is not overmixing the batter. Once the liquid
ingredients are added to the dry, mix the batter by hand just until the flour

is moistened, for no more than about ten seconds. Too much mixing can cause the
muffins to be dry, tough or misshapen.

And if you want to spruce your muffins up a little bit, here's a recipe for a
cinnamon

streusel topping

you can mix up in just a few seconds.

Prep Time: 15 minutes

Cook Time: 20 minutes

Total Time: 35 minutes

Ingredients:

list of 8 items

. 2 cups all-purpose flour, or 2¼ cups pastry flour, sifted

. ½ cup granulated sugar

. 1 Tbsp baking powder

. ½ tsp salt

. 1 cup whole milk

. 1 tsp pure vanilla extract

. 1 large egg (or 2 medium)

. 4 oz butter (½ stick) or shortening

list end

Preparation:

list of 9 items

1. Preheat oven to 400° F.

2. Combine the flour, baking powder and salt.

3. Unwrap the butter and heat it in the microwave, in a microwave-safe bowl,
for about a minute, until it's thoroughly melted. Set it aside at room
temperature

to cool, but don't let it solidify again.

4. Beat the eggs in a separate bowl and then add the sugar, milk and vanilla to
the eggs.

5. Thoroughly grease and flour a muffin pan (or use paper muffin liners).

6. Pour a tiny bit of the melted butter into the egg-vanilla-milk mixture and
stir it in. Repeat 3-4 more times, adding a slightly larger amount of the

liquid butter each time until it is all incorporated.

IMPORTANT: Don't add hot melted butter to the egg mixture as the heat from the
butter would cook the egg, and that's not what you want to do!

7. Add the liquid ingredients to the dry ones and mix no more than ten seconds.
The batter should be visibly lumpy, and you may see pockets of dry flour.

That's OK! It's extremely important not to overmix the batter, or the resulting
muffins will be too hard.

8. Gently pour the batter into the prepared muffin pan and bake immediately.

TIP: The dry and wet ingredients, respectively, can be mixed in advance, but as
soon as the wet and dry ingredients have been combined with each other,

the liquid will activate the baking powder and the batter must be baked right
away.

9. Bake 20 minutes or until a toothpick inserted into the center of a muffin
comes out clean.

list end.

I think they're called something else in the US. They are narrow on the
sides and they're shaped like a rectangle, not square or round. Poring
batter from a large bowl into one of those sheets can be tricky. A lot can

1/4 teaspoon salt
5 tablespoons butter
1/2 cup dark cocoa (I used Hershey's Special Dark)
2/3 cup sugar
1/3 cup brown sugar
1/2 cup sour cream
1 teaspoon vanilla extract
Coarsely ground sea salt

Sift flour, salt and baking soda, set aside.
In a medium sauce pan, over low heat, melt butter. Remove from heat and
stir in sugars. Add in cocoa and stir till completely blended. Add in
vanilla and sour cream. Stir until smooth and almost all lumps are gone.
A few small lumps are fine. Fold in flour mixture.

Gently roll into rough 1 inch balls and place on ungreased cookie sheet.
Flatten down as much as you'd like. These cookies will hold their shape.
Sprinkle a bit of sea salt on top of each cookie.

Bake in a preheated 350 degree oven for 10 minutes. Remove from oven and let
rest on cookie sheet for a few minutes before letting cool completely on racks.

I also thought these looked fantastic and want to try them as well. I'd have
noticed the missing bake instructions when I went to bake them. Thanks again,
for the save, Momcat! Your a doll!

[CnD] Italian Sausage and Pepperoni Stromboli

2012-09-19 Thread marilyn deweese
Italian Sausage and Pepperoni Stromboli
source: Bev Cooks.

I am making this for dinner tonight. Going to make two and freeze one of them
before baking for a busy night. Making a salad to go with it. I use the chicken
sausages also. Very good. Using the mozzarella and basil ones tonight, and
using turkey pepperoni. sue

What it took for 2 10-inch loaves:

1 pound pizza dough, cut in half
3/4 cup favorite marinara
3 links Italian sausage, casings removed (mine were actually flavored chicken
sausages, so use your fave!)
20 pepperoni's
1 medium green bell pepper, diced
4 slices provolone cheese, torn
3 Tbs. extra-virgin olive oil, divided

Preheat oven to 425.

Brown the sausages in a large skillet, until cooked through, 6 minutes.

On a lightly floured work surface, roll out each ball of dough until it looks
like a 10 to 12-inch pizza. Spoon the marinara over each crust, leaving about
an half an inch around the sides. Sprinkle the sausage over the marinara,
followed by the pepperoni, followed by the diced green bell pepper, and lastly
the torn cheese. No need for salt or pepper. The meats have plenty of flavor.

Now, lightly brush the edges with a little bit of the oil. Carefully roll up
the pizza, forming a Stromboli.

Transfer the Stromboli to a rimmed baking sheet lined with parchment paper.
Using a sharp knife, score 3 slits across the top of the Stromboli, allowing
steam to escape. I brushed a little more oil over the top, too. Makes it pretty.

Bake for about 25 minutes, or until dough has browned on top and is cooked
through.

Let sit for about 5 minutes, slice and serve! Enjoy. From Sue.

Chicken Parmesan Meatloaf, Posted by Sue!

source; Tasty Tidbits, tnt. I've made this 4 times now since last November, and
its very good. If your a parmesan fan, it's one you really should try. I like
to use ground chicken. The flavor is so much more mild then turkey, but you use
what you like. I only use 1/4 tsp oregano though, the 1/2 tsp is a little
overpowering with just 1 lb of meat. sue

Ingredients
1 lb ground chicken (ground turkey can be substituted)
1 egg
1/4 breadcrumbs
1/2 teaspoon dried basil
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
1-2 cloves garlic, finely minced
1 small onion, grated
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/2 cup grated Parmesan cheese
1/2 cup pasta sauce (homemade or store bought)
1/2 cup shredded Italian cheese blend
minced parsley for garnish

Preheat the oven to 350 degrees. Lightly grease a loaf pan with cooking spray,
set aside.

In a large bowl, combine the ground chicken, egg, breadcrumbs, thyme, oregano,
basil, garlic, onion, salt, pepper and Parmesan cheese. To not over handle the
mixture otherwise it will get tough. Place the mixture in the greased loaf pan
and form into a loaf. Top the meatloaf with pasta sauce.

Place filled loaf pan on a baking sheet and bake in the preheated oven for
40-45 minutes. Remove the meatloaf from the oven and sprinkle the top with the
remaining shredded cheese. Place the meatloaf back in the oven and bake until
the cheese is melted.

Remove the meatloaf from the oven and allow to rest for 5-10 minutes before
serving/slicing. Garnish with parsley if desired.

Recipe for Cake Ball Pops

This recipe for cake pops on a stick is adapted from one by

Wilton.

Cake pops are all the rage and they can be dressed up as elegantly as you like
for any occasion like bridal shower and wedding favors, or turned into wacky

characters the kids will love. These can also be made with crumbled cheesecake
(minus the graham-cracker crust!). Just imagine one of these at every child's

place for a kid's birthday party!

Prep Time: 2 hours

Cook Time: 30 minutes

Total Time: 2 hours, 30 minutes

Yield: 18 Cake Ball Pops

Ingredients:

list of 7 items

. 1 (18-ounce) box cake mix of choice, baked in a 13x9-inch pan, cooled and
halved (freeze other half for next time)

. 1/2 cup creamy frosting of choice

. 1 (14-ounce) bag

White Candy Melts

. 18

lollipop sticks

. Candy Colors

. Colored sugars, pearls and other decorations

. Cake Pops Gift Box

 (optional)

list end

Preparation:

list of 4 items

1. In a large bowl, crumble half of a 13x9-inch cake with the hands (use gloves
if you can't stand mess) until no large chunks remain. Add icing and mix

with fingers until well combined. Using a cookie scoop, portion into 18 balls.
Roll between the hands until round and smooth. Place on parchment-lined

sheet pan and freeze until no longer sticky, but not rock hard, about 1 hour.

2. Melt Candy Melts according to package directions. Dip lollipop stick ends
into melted candy and insert into cake pops. Place back on parchment-lined

tray and freeze for 1 hour to set the stick in the pop.

3. Add candy color to small amounts of melted chocolate and, working with one
pop at a time (leave the rest in the freezer), dip in melted chocolate until

completely covered. Shake off excess. Immediately roll in sugars or place
decorations on. If chocolate dries too fast, you can use royal icing to apply

decorations. Stick in a thick piece of Styrofoam to dry completely. Proceed
with remainder of pops.

4. If desired, place pops in a Cake Pops Gift Box or wrap in lollipop papers
and tie with a pretty ribbon.

Hi all,
I am suddenly in the mood for pancakes. Does anyone have a recipe for
basic ones (that is, no fancy fillings, flavors, or toppings)? I have
always loved mixes the best, but if there is a scratch recipe that can
equal or beat a mix, I would love to have it. I know they say egg whites
fluff pancakes, but it's not the fluffiness for me; mixes also have a
better overall taste, at least I think so. Any ideas? Thanks.

BISQUICK PANCAKES

Bake these plain or try one of the variations.

2 cups Bisquick baking mix

one egg

1 and 1/3 cups milk

1. Beat all ingredients with a rotary beater until smooth.

2. Pour batter from a 1/4 measuring cup onto a heated griddle. (Grease the
griddle, if necessary.)

3. Bake until bubbles appear. Turn and bake the other side until golden.
(About 18 pancakes.)

Apple Pancakes

Fold 2 cups finely chopped unpeared apples, (about 2 medium),

2tbs sugar

1tb lemon juice into the batter.

Bacon Pancakes

Fold into the batter, 4 slices bacon, crisply fried and then crumbled.

Banana Pancakes

Fold 1 cup mashed ripe bananas, (about 2 medium)

2tbs sugar into batter.

Coconut Pancakes

Fold 1 cup shredded into batter.

Orange Pancakes

(Note): Keep pancakes hot between layers of paper towels in a very low

Subject: [CnD] basic pancake recipes?

Hi all,
I am suddenly in the mood for pancakes.
Any ideas? Thanks.
