[CnD] Broccoli with Toasted Sesame Seeds
Broccoli with Toasted Sesame Seeds 2 pounds broccoli One quarter cup butter 1 Tbsp. soy sauce 2 tsp. sesame oil 1 clove garlic, minced 2 Tbsp. sesame seeds Salt and pepper to taste Cut broccoli florets into bite-sized pieces. Cut off the bottom inch of the stems, the peel the stems and cut into thin slices. Blanch broccoli by placing in a saucepan and covering it with water. Bring water to a boil and cook for just a couple of minutes until broccoli is crisp tender. Drain off water and add butter, soy sauce, sesame oil and garlic to the saucepan and cook for several more minutes. Add toasted sesame seeds and salt and pepper. You may toast the sesame seeds by placing them on a baking sheet and placing them in the oven on 400 degrees for several minutes until they turn golden brown. Absolute Best Cauliflower Casserole 5 cups cauliflower 2 cup sour cream 1 1/2 cups grated cheddar cheese 6 green onions, chopped (separate white and green parts) 1 1/2 teaspoons salt 1/2 teaspoon pepper 6 slices cooked crisp bacon, crumbled Cook cauliflower until tender but firm. Chop into pieces about the size of hash browns. Mix in sour cream, 1 cup of the cheddar, white part of green onions, salt and pepper. Stir in cauliflower. Place in greased baking dish and sprinkle rest of cheddar on top. Bake at 350º for 20 minutes or until heated through. Crumble bacon on top and sprinkle on the chopped tops of the green onions. Reheats well in the micro, but doesn't freeze well. Recipe can be doubled. Serves 10. I use a 2 quart casserole dish for one recipe, but I have doubled and tripled it and used a 9 by 13 inch baking dish. If you wanted more than that, if you have a lasagna dish, that would work as well. CINNAMON ROLL RAISIN BISCUITS 3 c. biscuit mix (like Bisquick) 3/4 c. plus 2 tbsp. water 3/4 c. raisins 2 tbsp. shortening, divided 1 c. powdered sugar, divided 2 1/2 tsp. water Combine biscuit mix, water, raisins, and 2 teaspoons cinnamon. Turn dough onto surface sprinkled with biscuit mix. Knead lightly 3 or 4 times. Divide dough into 2 balls. Roll each ball to about a 10 x 6 inch rectangle. Spread each with 1 tablespoon shortening. Combine 1/4 cup sugar and 1/2 teaspoon cinnamon. Sprinkle evenly over each. Roll up dough in a jelly roll fashion beginning with longest side. Cut into 1 inch pieces. Place on lightly greased baking sheet. Bake at 450 degrees for 12 to 13 minutes. Combine remaining 3/4 cup sugar, 2 1/2 teaspoons water and 1 teaspoon cinnamon. Spread this glaze on warm biscuits. Place walnuts and cherries in pan. Separate dinner rolls. Place cheese cube in center of each roll. Sprinkle with sugar and cinnamon mixture. Bring up sides and seal cheese and cinnamon and sugar within rolls. Place seam side up. Stagger each layer of rolls until all are used. Sprinkle remaining sugar mixture on top. My Mom's Two Pork Roast Recipes My mom makes these and I have tried both of them and they are delicious. Mom's Rosemary Pork Roast 1 boneless pork loin, (3 to 3 1/2 pounds) 1/2 cp green onion, (chopped) 2 1/4 cps chicken broth, (divided) 1/4 cp red wine or cider vinegar 2tbs olive or vegetable oil 4 garlic cloves, (minced) 1tb minced fresh Rosemary or 1tsp dried and crushed 1/4tsp pepper 1tsp salt, (optional) 2tbs cornstarch 1/4cp cold water. Place the roast in a large resealable plastic bad or a container with a tight-fitting lid. Combine the onion, 1/4cp of the chicken broth, vinegar, garlic, oil, Rosemary and pepper. Pour over the roast. Cover; refrigerate for 4 to 8 hours. (Mom and I do it overnight). Turn roast occasionally. Remove roast and place in an ungreased roasting pan, , fat side up. Combine marinade with the remaining chicken broth. Add salt, if desired. Bake uncovered at 350 degrees for 2 to 2 and 1/2 hours or until meat thermometer reads 270 degrees. Remove roast from pan and place on a warmed platter. Meanwhile, skim off fat and pour remaining juices into a saucepan. Combine cornstarch with cold water and mix well with a whisk. Add cornstarch mixture to saucepan and bring to a boil over medium heat. Boil and stir for about 2 minutes Serve the gravy with the roast. Yields 8 servings. Teriyaki Pork Roast 3/4cp unsweetened apple juice 2tbs sugar 2tbs soy sauce 1tb red wine vinegar 1tsp ground ginger 1/4tsp garlic powder 1/8tsp pepper 1 boneless pork loin roast, (about 3 pounds, halved) 6tbs cornstarch 3tbs cold water Combine the first 7 ingredients in a greased slow cooker. Add the roast and turn to cover. Cover and cook on low for 6 to 8 hours or until a thermometer inserted in the roast reads 170 degrees. Remove roast and keep warm on a warmed platter. In a saucepan, combine cornstarch and water and whisk until smooth. Stir in the cooked juices. Bring to a boil over medium heat. Stir for 2 minutes or until desired thickness. Crock Pot Turtle Pudding 1 21.5 oz. package brownie mix 1/2 C. water 1/4 C. oil 1 egg 1 C. chocolate chips 1 C. walnuts or pecans 20 caramel candies unwrapped whipped cream or vanilla ice cream Place a vegetable steamer or other low rack in the bottom of a 5-quart slow-cooker. Pour in 4 cups very hot water and turn on to high. In a large bowl, combine the brownie mix, water, oil and egg. Beat well to mix. Stir in the chocolate chips and nuts. Butter and dust with sugar a 2-quart soufflé dish that fits in the slow-cooker. Pour the brownie batter into the soufflé dish. Push the caramels half way into the brownie mix, do not bury completely in the brownie mix. Wrap the dish in a double thickness of foil. Tie with a string to use as a handle for lowering and raising out of the Crockpot. Cover and cook on high for 4.5 hours. Remove the dish and let set for 30 minutes before serving. Pour over the roast. Cover; refrigerate for 4 to 8 hours. (Mom and I do it overnight). Turn roast occasionally. Remove roast and place in an ungreased roasting pan, , fat side up. Combine marinade with the remaining chicken broth. Add salt, if desired. Bake uncovered at 350 degrees for 2 to 2 and 1/2 hours or until meat thermometer reads 270 degrees. Remove roast from pan and place on a warmed platter. Meanwhile, skim off fat and pour remaining juices into a saucepan. Combine cornstarch with cold water and mix well with a whisk. Add cornstarch mixture to saucepan and bring to a boil over medium heat. Boil and stir for about 2 minutes Serve the gravy with the roast. Yields 8 servings. Teriyaki Pork Roast 3/4cp unsweetened apple juice 2tbs sugar 2tbs soy sauce 1tb red wine vinegar 1tsp ground ginger 1/4tsp garlic powder 1/8tsp pepper 1 boneless pork loin roast, (about 3 pounds, halved) 6tbs cornstarch 3tbs cold water Combine the first 7 ingredients in a greased slow cooker. Add the roast and turn to cover. Cover and cook on low for 6 to 8 hours or until a thermometer inserted in the roast reads 170 degrees. Remove roast and keep warm on a warmed platter. In a saucepan, combine cornstarch and water and whisk until smooth. Stir in the cooked juices. Bring to a boil over medium heat. Stir for 2 minutes or until desired thickness. The one I bought from Dale has the little thing that you put the thermometer in to hook on the sides of a pan and that is what I use to make candy. I also use a spoon and I use the tip of my index finger to make sure that the frosting is at the edge. Touch it very gently though, or you'll leave a finger print. I don't care when I'm frosting it just for me and my roommate, but if I take it somewhere, then I try to be more careful. Sometimes, since my roommate has sight, he does it for me. Lightly grease two 8×4x3-inch loaf pans. In a medium mixing bowl, combine cream cheese, 1/2 cup sugar, 1 Tbsp. flour, 1 egg, and the orange peel; beat until smooth and creamy. Set aside. Into another bowl, sift 1 2/3 cup flour, baking soda, salt, cinnamon, cloves, ginger, and nutmeg; set aside. Mix cake mix that was set aside with 2 teaspoons melted butter, 1/4 cup granulated sugar and 1/2 teaspoon cinnamon. Add chopped nuts and sprinkle on top. Heat oven to 400 degrees for 15 minutes. Too much mixing can cause the muffins to be dry, tough or misshapen. And if you want to spruce your muffins up a little bit, here's a recipe for a cinnamon streusel topping you can mix up in just a few seconds. Prep Time: 15 minutes Cook Time: 20 minutes Total Time: 35 minutes Ingredients: list of 8 items . 2 cups all-purpose flour, or 2¼ cups pastry flour, sifted . ½ cup granulated sugar . 1 Tbsp baking powder . ½ tsp salt . 1 cup whole milk . 1 tsp pure vanilla extract . 1 large egg (or 2 medium) . 4 oz butter (½ stick) or shortening list end Preparation: list of 9 items 1. Grease and flour two bread loaf pans. Combine dry ingredients in a large mixing bowl. Add carrots, oil and eggs. Beat well, until mixed. Add other ingredients and stir. Put into baking pans. Bake for 1 hour or until done. Completely cool cakes before frosting. The Frosting: 1/2 cup butter, softened 1 - 8 ounce cream cheese, softened 1 - 16 ounce box powdered sugar, sifted 2 teaspoons vanilla extract 1 cup chopped and toasted walnuts or pecans 1 cup flaked coconut Combine butter and cream cheese; cream until light and fluffy. In a medium sauce pan, over low heat, melt butter. Remove from heat and stir in sugars. Add in cocoa and stir till completely blended. Add in vanilla and sour cream. Stir until smooth and almost all lumps are gone. A few small lumps are fine. Fold in flour mixture. Gently roll into rough 1 inch balls and place on ungreased cookie sheet. Flatten down as much as you'd like. These cookies will hold their shape. Sprinkle a bit of sea salt on top of each cookie. Bake in a preheated 350 degree oven for 10 minutes. Remove from oven and let rest on cookie sheet for a few minutes before letting cool completely on racks. I also thought these looked fantastic and want to try them as well. I use the chicken sausages also. Very good. Using the mozzarella and basil ones tonight, and using turkey pepperoni. sue What it took for 2 10-inch loaves: 1 pound pizza dough, cut in half 3/4 cup favorite marinara 3 links Italian sausage, casings removed (mine were actually flavored chicken sausages, so use your fave!) 20 pepperoni's 1 medium green bell pepper, diced 4 slices provolone cheese, torn 3 Tbs. extra-virgin olive oil, divided Preheat oven to 425. Brown the sausages in a large skillet, until cooked through, 6 minutes. On a lightly floured work surface, roll out each ball of dough until it looks like a 10 to 12-inch pizza. Spoon the marinara over each crust, leaving about an half an inch around the sides. Sprinkle the sausage over the marinara, followed by the pepperoni, followed by the diced green bell pepper, and lastly the torn cheese. No need for salt or pepper. The meats have plenty of flavor. Now, lightly brush the edges with a little bit of the oil. Carefully roll up the pizza, forming a Stromboli. Transfer the Stromboli to a rimmed baking sheet lined with parchment paper. Using a sharp knife, score 3 slits across the top of the Stromboli, allowing steam to escape. I brushed a little more oil over the top, too. Makes it pretty. Bake for about 25 minutes, or until dough has browned on top and is cooked through. Let sit for about 5 minutes, slice and serve! Enjoy. Ingredients 1/4 cup melted butter 2 cans (12.4 oz each) Pillsbury® refrigerated cinnamon rolls with icing 5 eggs 1/2 cup heavy whipping cream 2 teaspoons ground cinnamon 2 teaspoons vanilla 1 cup chopped pecans 3/4 cup maple syrup Garnish Icing from cinnamon rolls Powdered sugar Maple syrup, if desired Directions Melt butter and pour on ungreased 13×9 inch glass dish. Separate cans of dough into 16 rolls reserving the icing for later use. Cut each roll into 8 pieces and add to buttered baking dish. Beat eggs in medium bowl. Add cream, cinnamon and vanilla and beat until well blended. Pour over cut pieces of cinnamon roll pieces. Sprinkle with pecans and drizzle 3/4 cup syrup over the top. Bake at 375 for 20 to 28 minutes or until golden brown. Cool 15 minutes. Remove the covers from icing and microwave on medium or 50% power for 10 to 15 seconds. (Should be thin enough to drizzle.) I like to use ground chicken. The flavor is so much more mild then turkey, but you use what you like. I only use 1/4 tsp oregano though, the 1/2 tsp is a little overpowering with just 1 lb of meat. sue Ingredients 1 lb ground chicken (ground turkey can be substituted) 1 egg 1/4 breadcrumbs 1/2 teaspoon dried basil 1/2 teaspoon dried thyme 1/2 teaspoon dried oregano 1-2 cloves garlic, finely minced 1 small onion, grated 1/2 teaspoon salt 1/4 teaspoon ground black pepper 1/2 cup grated Parmesan cheese 1/2 cup pasta sauce (homemade or store bought) 1/2 cup shredded Italian cheese blend minced parsley for garnish Preheat the oven to 350 degrees. Lightly grease a loaf pan with cooking spray, set aside. In a large bowl, combine the ground chicken, egg, breadcrumbs, thyme, oregano, basil, garlic, onion, salt, pepper and Parmesan cheese. To not over handle the mixture otherwise it will get tough. Place the mixture in the greased loaf pan and form into a loaf. Top the meatloaf with pasta sauce. Place filled loaf pan on a baking sheet and bake in the preheated oven for 40-45 minutes. Remove the meatloaf from the oven and sprinkle the top with the remaining shredded cheese. Place the meatloaf back in the oven and bake until the cheese is melted. Remove the meatloaf from the oven and allow to rest for 5-10 minutes before serving/slicing. In a large bowl, crumble half of a 13x9-inch cake with the hands (use gloves if you can't stand mess) until no large chunks remain. Add icing and mix with fingers until well combined. Using a cookie scoop, portion into 18 balls. Roll between the hands until round and smooth. Place on parchment-lined sheet pan and freeze until no longer sticky, but not rock hard, about 1 hour. 2. Melt Candy Melts according to package directions. Dip lollipop stick ends into melted candy and insert into cake pops. Place back on parchment-lined tray and freeze for 1 hour to set the stick in the pop. 3. Add candy color to small amounts of melted chocolate and, working with one pop at a time (leave the rest in the freezer), dip in melted chocolate until completely covered. Shake off excess. Immediately roll in sugars or place decorations on. If chocolate dries too fast, you can use royal icing to apply decorations. Stick in a thick piece of Styrofoam to dry completely. Proceed with remainder of pops. 4. Yes, you can, but you need to cut down on the baking time, because the cake won't be as thick in the 9 by 13 inch pan.
