[RecipesAndMore] Asian Chicken

Asian Chicken 

Serves : 6
8 chicken breast halves, skin removed
15 oz canned whole baby corn
8 oz sliced water chestnuts
1 large red bell pepper, sliced
3/4 cup stir-fry or teriyaki sauce
1/2 cup chopped onion
4 strips fresh orange peel
1 tsp. fresh grated ginger
cashews or peanuts 
Mix all ingredients in slow cooker. Cover and cook on high for 4 hours
or low for 7-9 hours. Carefully lift chicken out onto serving platter
with slotted spoon. Top with sauce and vegetables. Sprinkle with nuts.

 MASHED POTATO CHOCOLATE CAKE

 1/8 ts Salt
   3Squares of unsweetenedChocolate
   1 ts  Baking powder
   1 ts Vanilla
 1/2 c  Milk
   1 c  Margarine
   4Eggs, separated
   2 c  Sifted flour
   2 c  Sugar
   1 c  Mashed potatoes
  
   Heat milk and chocolate in a saucepan, stir until
melted and then cool.
   Cream 1 3/4 cups of the sugar with margarine. Add egg yolks and mashed 
potatoes; mix well. Beat egg whites until stiff but not dry. Add 1/4 cup of   
sugar to egg whites and beat.  Fold into cake
mixture. Bake at 350 degrees
   for 30 minutes.

SUSAN HOWARD'S TEXAS PECAN PIE

Yield: 6 Slices

19 pie crust; uncooked
3Eggs
1 ds Salt
1 c  Light brown sugar; firmly pack
1 ts Flour; heaping
1 c  Light karo syrup
1 ts Vanilla
Large whole pecan halves

Mix all ingredients until smooth. Pour into pie crust. Top with whole pecan 
halves. Bake in preheated 350~ oven for 1 hour or until filling is almost
set. (It should jiggle a little.) Cool completely before cutting. Serve with 
generous amounts of whipped cream.

Kenny Chesney's most recent studio album, The Road and the Radio, has been
certified triple platinum by the RIAA for shipments of 3 million copies.
Released
in 2005, it contains the hits Living in Fast Forward, Who You'd Be
Today, You Save Me, Summertime and his current single, Beer in
Mexico. His
concert CD, Live Those Songs Again, was released in 2006. He is currently
producing an acoustic album by band member Tim Hensley and another project
by
Willie Nelson. Chesney also continues to plan his 2007 tour that will
include shows at NFL stadiums in Pittsburgh, Philadelphia, Seattle,
Cleveland, Boston
and Detroit.

McGraw, Hill Among Country Acts on Forbes List

Tim McGraw and Faith Hill brought in a combined $132 million in revenue in
2007, according to estimates from Forbes magazine. The publication tallied
ticket
sales and album sales to come up with the figures. McGraw and Hill's
Soul2Soul II tour earned $88.8 million. McGraw sold $34.3 million in albums
and Hill
sold $8.9 million. Other country stars in the magazine's Top 10 list of
money-making musicians include Rascal Flatts ($110.5 million) and Kenny
Chesney
($90.1 million). The Rolling Stones ranked first on the list, earning $150.1
million, just ahead of McGraw and Hill.

Escaped Felon Steals Crystal Gayle's Tour Bus

An escaped felon from Texas has been accused of stealing Crystal Gayle's
tour bus in Tennessee and abandoning it Thursday (Jan. 25) at the USA
International
Speedway in Lakeland, Fla. Christopher Daniel Gay escaped during a bathroom
break in South Carolina on Sunday (Jan. 21) while being transported from
Texas
to Alabama, then stole a pickup truck and arrived in Manchester, Tenn, on
Tuesday (Jan. 23). There, he is believed to have stolen a tractor-trailer
filled
with merchandise at a Wal-Mart store. He drove to his mother's house in
Pleasant View, Tenn., but fled just after crashing the trailer next to his
mother's
house. Gayle's bus was apparently later stolen from a storage lot near
Nashville and driven to Florida by Gay. The singer and husband Bill
Gatzimos, who
also manages her, were unaware the vehicle was missing. Authorities in
Florida said Gay arrived at the track and told security guards he was there
to pick
up NASCAR driver Tony Stewart. Gay then left the area after telling them he
was going to a fast food restaurant. Gay was still at large Friday afternoon
(Jan. 26), and the tour bus had still not been recovered.

Keith Urban Announces Cities on U.S. Tour

Keith Urban has confirmed four additional U.S. dates for the North American
leg of his upcoming Love, Pain  the Whole Crazy Thing world tour. Urban
announced
Thursday (Jan. 25) that he will be playing 36 concerts in 33 cities in the
U.S. and Canada, but the only specific date listed was the June 8 kickoff in
Phoenix. The newly-announced shows include Milwaukee (July 26), Omaha, Neb.
(July 28), Worchester, Mass. (Aug. 11) and Philadelphia (Aug. 18). Urban
will
also perform a Feb. 8 charity show in Chicago at the Chicago Theatre to make
up a November show that was canceled after he checked himself into the Betty
Ford Center for treatment of alcohol abuse. Urban has also announced dates
for seven concerts in April in Germany and the United Kingdom, including two
nights at London's Shepherds Bush Empire.

Miss America Preliminary Winners Announced

Miss Texas Shilah Phillips won the preliminary talent competition for her
vocal performance of I Believe in You and Me on the first night of
competition
in the 2007 Miss America Pageant at the Aladdin/Planet Hollywood Resort and
Casino in Las Vegas on Thursday night (Jan. 25). Phillips will receive a
$2,000
scholarship. Miss Oklahoma Lauren Nelson won the preliminary category of
lifestyle and fitness in swimsuit in a yellow two-piece Venus swimsuit.
Nelson
will receive a $1,000 scholarship. The Miss America Pageant will air on CMT
on Monday (Jan. 29) at 8 p.m. ET/PT.

[RecipesAndMore] Sweet Dough For Pies

SWEET DOUGH FOR PIES

One crust pie -- about 10 ounces
dough:
1 1/4  cups  all purpose bleached flour
1/4  cup   sugar
1/4  teaspoon  baking powder
1/8  teaspoon  salt
4  tablespoons   cold unsalted butter -- (1/2 stick)
1  large egg
Two crust pie -- about 1 1/4 pounds
dough:
2 1/2  cups  all purpose bleached flour
1/2  cup   sugar
1/2  teaspoon  baking powder
1/4  teaspoon  salt
8  tablespoons   cold unsalted butter -- (1 stick)
2  large eggs

To mix the dough by hand, combine flour, sugar, salt and baking powder in a 
medium
mixing bowl and stir well to mix. Cut butter into 1 tablespoon pieces and
add to dry ingredients. Toss
once or twice to coat pieces of butter. Then using your hands or a pastry 
blender, break the butter
into tiny pieces and pinch and squeeze it into the dry ingredients.
Occasionally reach down to the
bottom of the bowl and mix all the ingredients evenly together. Continue
rubbing the butter into the
dry ingredients until the mixture resembles a coarse ground corn meal and no
large pieces of butter
remain visible.
Beat the egg (s) in a small bowl and pour over the flour and butter mixture.
Stir in with a fork until the
dough begins to hold together, but still appears somewhat dry. Scatter a
teaspoon of flour on the
work surface and scrape the dough out onto it. Press and knead the dough
quickly 3 or 4 times, until
it is smooth and uniform.
To mix the dough in the food processor, combine flour, sugar, salt and
baking powder in work bowl
fitted with metal blade. Pulse 3 times at 1second intervals to mix. Cut
butter into 1tablespoon pieces
and add to work bowl. Process, pulsing repeatedly at 1second intervals,
until the mixture is fine and
powdery, resembles a coarse ground cornmeal and no large pieces of butter
remain visible, about 15
pulses in all.
Add the egg (s) to the work bowl and pulse ten times or so, until the dough
forms a ball.
Scatter a teaspoon of flour on the work surface and scrape the dough out
onto it. Press and knead
the dough quickly 3 or 4 times, until it is smooth and uniform.
Press the dough into a disk (two equal disks for the larger amount of
dough). Sandwich the disk (s) of
dough between two pieces of plastic wrap and press it into a 6 inch circle.
Refrigerate the dough until
firm, or until you are ready to use it, at least 1 hour.
Storage: Keep the dough in the refrigerator up to two days, or freeze it
doublewrapped in plastic.
Because the dough is thin, it will defrost quickly at room temperature when
you intend to use it.
Variations:
SPICE CRUST:
Add 1/2 teaspoon ground cinnamon and 1/4 teaspoon each freshly grated nutmeg
and ground cloves
to the dry ingredients before mixing in the butter. Double the quantities
for the 2 crust recipe.
COCOA DOUGH:
Add 2 tablespoons sifted non alkalized cocoa powder to the dry ingredients
before mixing in the
butter. Double the quantities for the 2 crust recipe. If the dough seems dry
after adding egg (s), add a
teaspoon or two of water, no more.

Jazzed-Up Tomato Soup

4 cups prepared tomato soup (from can or jar)
1/2 cup prepared salsa
1/2 cup tortilla strips or chips, divided
4 Tbs. sour cream
2 tsp. sliced scallions

In a small saucepan, combine soup and salsa.  Set pan over medium heat
and bring to a simmer.  Remove from hat and ladle soup into 4 bowls.
Top with tortilla chips, sour cream, and scallions just before serving.

 Bacon Supper Snack
 
 Serving Size  : 4 

8  Slicesbacon
   14 1/2  Ounce Tin Tomatoes
 Stuffing:
  1/2  Ounce Butter
2  OuncesMushrooms -- Chopped
3  OuncesSoft White Bread Crumbs
 Salt And Pepper
  1/2  Teaspoon  Mixed Herbs
 Egg To Bind -- Beaten
 
 Melt butter and gently fry mushrooms for 2 minutes.
Combine with breadcrumbs,
 salt, pepper and herbs. Use just sufficient beaten
egg to bind - about 3
 tablespoonfuls.
 Divide stuffing between bacon slices. Roll up and
secure each, if necessary,
 with a wooden cocktail stick.
 Cook for 5 minutes under a hot grill, turning once.
Remove sticks and place
 bacon rolls in an oven dish, in a single layer.
 Press tomatoes through a sieve into a saucepan.
Season to taste and bring to
the
 boil. Pour oven bacon rolls and cook in a very
moderate oven (350 F - gas mark
 3) for 30 minutes.
 
 Serve with creamed potatoes and, if liked, a tossed
green salad.

1   cMayonnaise
  1/2   cSugar
  1/4   cVinegar
2 1/2   lb   Broccoli (or 2 big bunches)
1   cShredded sharp cheddar
 - cheese
  1/2   lb   Bacon, crisp fried and
 - crumbled
 
   Whisk together mayonnaise, sugar and vinegar and
set aside.  Cut
   broccoli into florets and combine in large bowl
with cheese and
   bacon.  Toss with mayonnaise dressing.  Cover and
chill overnight

 Serving Size  : 4 
  
4  Cups  Water
  1/2  Pound Green Beans (about 2 Cups) --
1 Pieces
4  Small New Potatoes -- Scrubbed,Cut
in 8
1 1/2  Teaspoons Salt
5  SlicesBacon -- 1 Pieces
  1/4  Cup   Onion -- Chopped
  1/4  Teaspoon  Pepper
 
 In a medium saucepan, place water, beans, potatoes
and 1 teaspoon of the
 salt.  Over medium-high heat, bring to a boil. 
Reduce heat to low,
 cover and simmer for 10 to 12 minutes or until
tender.  Drain.  Cover
 and set aside.  
 
 Meanwhile, in a 12 inch skillet over medium-high
heat, cook bacon and
 onion until bacon is crisp and onion is tender. 
Drain off all but 1
 tablespoon of the bacon drippings.  Add beans and
potatoes and toss
 until well coated with bacon and onion.  Sprinkle
with remaining 1/2
 teaspoon salt and pepper and serve.

   Yield: 6 Servings
  
   2Slices bacon, crisp-cooked
And crumbled
 1/2 c  Finely diced, cooked country
Ham
 1/2 c  Chopped onion
   1 T  Minced, fresh ginger root
   7 c  Shredded green cabbage
 1/2 c  Heavy cream
  
   In a large pot, layer in order: bacon, ham, onion,
ginger, and
   cabbage. Pour cream over all. Bring to a simmer.
Reduce heat to
   medium. Cook 10 minutes, stirring occasionally,
until cabbage is soft
   and liquid is reduced to a thick sauce.

OVERNIGHT MACAROONS 

2 c. quick cooking oats
1/2 c. salad oil
1/2 tsp. salt
1 c. brown sugar
1 egg, beaten
1/2 tsp. almond extract


Mix oats, brown sugar and salad oil. Let stand overnight. Next 
day mix all ingredients together; place by spoonful on a greased 
cookie sheet. Bake 15 minutes at 325 degrees. Remove from cookie 
sheet immediately to cool. Makes about 30 macaroons.

Bacon Wrapped Meat Loaf
 
 2  Lb.   ground beef
2eggs
1  Pkg.  bacon
1onion
 parsley
 garlic powder
 cracker meal
 ground beef seasoning
 
 Place ground beef in large bowl, add parsley, garlic powder and ground beef 
seasoning according to taste.
Grind onion, then add eggs. Add cracker meal until firm.
Form loaf.
 Place on a rack in a roasting pan, wrapping bottom
first. Wrap
 entire loaf so that strips overlap. Crisscross strips
on top
 to hold firm. Bake at 325 degrees to 350 degrees for 1 to 1 1/2 hours, until
 firm. Especially good as leftovers.

 Bacon Chicken Bake

 Serves 4. 
 
4skinless boneless chicken
breast halves --
 cooked
6  slicesbacon -- cooked crisp
1  can   cream of chicken soup
 seasoned bread crumbs
 dried tarragon
 garlic powder
 salt and freshly ground
pepper
 
  Place chicken in casserole dish, arrange bacon
slices on top. Mix
 soup with 1/2 cup water, spread on top of chicken.
Sprinkle with
 seasonings to taste. Top with bread crumbs. Bake at
400° for 40
 minutes.  

Enjoy.

Hot Beef Dip--Microwave

1 tablespoon butter
1/2 cup chopped green onion
2 Tbsp. dry white wine
8 oz cream cheese, softened 
1/2 cup sour cream
2 1/2 oz dried beef, finely chopped
1/2 cup chopped pecans

Place butter in a 1 quart casserole and microwave on high until
melted. Add onions, cover and microwave on high for 2 minutes or
until tender. Stir in wine, microwave on high for 1 minute. Add
next 4 ingredients and mix well. Microwave on high for 4 more 
minutes.

Serve with crackers.

This is also a good spread to place over a low heat burner at a

Serves 6.
  
1  10   Unbaked Pie Shell
1  QtBlackberries
1  C Flour
2  C Granulated Sugar
1  C Milk

Fill shell with berries.  Mix flour, sugar, and milk.  Pour mixture over
berries.  Bake at 350° for 45 to 50 minutes until center is set.  If
desired, brown under broiler.

Serves 6

1 teaspoon dryed mustard
1/4 cup brown sugar
put onion  bacon in a microwave dish, cook  2 minutes, on medium power.
add the rest of ingredients, microwave 4 minutes on medium power.
stir  microwave 4 minutes longer, at higher power.
makes 4 to 6 servings

---Crust---
20ALMOND JOY candy bar
Miniatures; or
10ALMOND JOY Snack Size
3/4 c  Graham cracker crumbs

--FILLING---
1/2 c  Sugar
1/3 c  Cornstarch
1/4 c  HERSHEY'S Cocoa
1/4 ts Salt
1 1/2 c  Milk
1 ts Vanilla
16ALMOND JOY candy bar
Miniatures; or
8ALMOND JOY Snack Size,
-cut in 1/2 pieces
-candy will cut easier if
-placed in freezer 15 min
-before cutting
Sweetened whipped cream; or
-whipped topping, opt

Prepare Almond Joy Crust.  In med saucepan, stir together sugar, starch,
cocoa  salt; blend in milk. Cook over med heat, stirring constantly with
wire whisk, till mix boils; boil  stir 1 min. (Mix will be very thick.)
Remove from heat; blend in vanilla. Add candy pieces; stir till melted.
Pour into prepared crust; press plastic wrap onto surface. Refrigerate; top
with sweetened whipped cream, if desired. 6 - 8

ALMOND JOY CRUST:  Preheat to 325.  Lightly butter 9 pie plate. Place
ingredients  in food processor. Process till mix is thoroughly blended.
Press onto bottom  up sides of prepared pie plate. Bake 10 min. Cool on
rack.  Cool completely.

Sour Cream-Lemon Pie
1 and 1/4 c  graham cracker crumbs
2 tb granulated sugar
1/3 c  butter or margarine; melted
1 c  granulated sugar
1/4 c  cornstarch
1 c  milk
3egg yolks; slightly beaten
1/3 c  lemon juice
1/4 c  butter or margarine; cut up
1 tb lemon peel; finely shredded
8 oz sour cream
2/3 c  whipping cream
4 ts granulated sugar
1/2 ts vanilla extract
lemon twists; optional

Preheat oven to 350 degrees.  For the crust, in a medium bowl,
combine the graham cracker crumbs and 2 tablespoons sugar.  Add 1/3 cup
melted butter and toss to mix well.  Spread the mixture evenly into a
9-inch pie plate, pressing onto the bottom and up the sides to form a
firm, even crust.  Bake for 6 minutes, or until the edge is lightly
browned.  Cool on a wire rack.  For the filling, in a medium saucepan,
combine the 1 cup sugar, cornstarch, milk
and egg yolks.  Cook and stir over medium-high heat until the mixture is
thickened and bubbly.  Reduce the heat.  Cook
for 2 minutes longer.  Remove from the heat.  Gently stir in
the lemon juice, cut up butter and lemon peel.  Add the sour
cream, mixing gently until just combined.  Pour the filling into the pie
crust.  Cover and chill for 4 to 6 hours.  In a
chilled bowl, combine the whipping cream, 4 teaspoons sugar and vanilla
extract.  Beat with chilled beaters of an electric mixer on medium speed
until soft peaks form.  Top the pie with dollops of the whipped cream.
Garnish with lemon twists, if you like.  Store the pie in the

January 24, 2007

Ingrediants:

2 cups flour

2 cups sugar

3/4 cups cocoa

2 tsp baking soda

1 tbsp baking powder

2 eggs, beaten

1 cup milk

1 cup hot coffee, strong or weak according to your preference

 

Directions:

Mix all ingredients except hot coffee.

Add hot coffee and beat slowly Mixture will be thin.

Pour into a 9-inch square pan.

Bake at 350 degrees

for 30 to 35 minutes.

 CHOCOLATE FUDGE

 1 pkg. (8 sqs.) Baker's semi-sweet
 chocolate
 2/3 c. sweetened condensed milk
 1 tsp. vanilla
 1/8 tsp. salt
 1 c. walnuts, chopped

 Microwave chocolate and milk in 1 1/2 quart microwave bowl on High 2
 minutes, stirring after 1 minute. Stir until chocolate is completely 
 melted
 and smooth.
 Stir in vanilla, salt and walnuts. Spread in greased 9 x 5 inch loaf pan.
 Refrigerate until firm, about 2 hours. Cut.

 PEANUT BRITTLE

 1 c. raw peanuts
 1/2 c. light corn syrup
 1/8 tsp. salt
 1 tsp. vanilla flavoring
 1 c. sugar
 1 tsp. soda
 1 tsp. margarine

 Combine peanuts, sugar, salt and corn syrup in ovenproof mixing bowl, at
 least 3 quart size. Cook in microwave oven on high for 4 minutes, stir, 
 then
 cook
 2 more minutes. Nuts should be golden brown. Add soda and vanilla. Stir
 until light and foamy. Pour onto a greased cookie sheet spreading mixture 
 as
 thin
 as possible. Let cool, then break into serving pieces. Store in zip-lock
 bag. Fill mixing bowl with hot water as soon as empty to make cleaning
 easier.
 Cooking time may vary depending on microwave.

 EAGLE BRAND CHOCOLATE FUDGE

 12 oz. semi-sweet chocolate chips
 1 can Eagle Brand milk
 2 heaping tbsp. peanut butter

 Place chocolate chips and milk in microwave safe bowl. Cook on high for 5
 minutes. Remove from microwave, stir in 2 heaping tablespoons of peanut
 butter.
 Spread in pan. Cool and cut.

 PEANUT CLUSTERS

 6 sq. of almond bark (white)
 6 oz. or 12 oz. chocolate morsels
 1 can salted peanuts

 Melt almond bark and chocolate in microwave. Add peanuts and drop on waxed
 paper.

 MICROWAVE MOUNDS

 1 can Eagle Brand condensed milk
 2 c. powdered sugar
 14 oz. bag coconut
 1 tsp. vanilla flavoring

 Mix and roll into balls and refrigerate until firm. 1 (12 oz.) bag 
 chocolate
 chips
 1/4 lb. paraffin wax

 Melt above ingredients in the microwave or double boiler. Dip balls twice 
 in
 chocolate mixture.

 TURTLES

 12 oz. semi sweet chocolate chips
 4 oz. unsweetened chocolate
 4 tbsp. unsalted butter

 Melt above ingredients in double boiler or microwave. Stir in 1 1/2 cups
 sugar. Beat well and stir in: 4 eggs
 2 tsp. vanilla

 Combine: 1/2 c. flour (spoon into cup)
 1/2 tsp. baking powder
 1/4 tsp. salt

 Stir in: 1 to 2 c. chopped pecans
 12 oz. chocolate chips

 Line cookie sheet with foil. Drop 1/4 cup cookie mix and make arms and 
 legs
 with whole pecans for turtles. Bake at 350 degrees for 10 to 12 minutes.

 MARBLE FUDGE

 1 (12 oz.) pkg. semi-sweet chocolate
 1 (12 oz.) pkg. butterscotch
 1 c. peanut butter
 1 (10 1/2 oz.) pkg. mini marshmallows
 1 c. salted nuts

 1. Combine chocolate, butterscotch and peanut butter in large glass bowl. 
 2.
 Microwave on medium 5 minutes. Stir until melted. 3. Fold in marshmallows
 and
 peanuts. Spread in a buttered 13 x 9 inch pan. 4. Refrigerate for several
 hours or until set. Cut into squares.

 PRETZEL CANDY

 1-1/2 c. white chocolate
 3/4 c. broken pretzel sticks
 3/4 c. dry roasted nuts

 Melt white chocolate in microwave. Stir in pretzels and peanuts. Pour out 
 on
 cookie sheet. Freeze 10 minutes. Break apart.

 MICROWAVE CARAMELS

 1 c. butter or margarine, melted
 1 (14 oz.) can sweetened condensed milk
 1 c. light corn syrup
 1 (1 lb.) pkg. light brown sugar
 1 tsp. vanilla extract
 2 c. semisweet chocolate chips, melted

 *Blend first 4 ingredients in large microwave-safe bowl. Microwave on High
 for 17 minutes, stirring every 3 minutes, mix in vanilla. *Pour into
 buttered
 9x13 pan. Chill in refrigerator overnight. *Pour melted chocolate over
 caramels. Cut into 1-inch squares. *May substitute almond bark for 
 chocolate

Ingredients:
8 Rhodes Texas™ Rolls or 12 Rhodes™ Dinner Rolls, thawed
1 cup apple pie filling
4 tablespoons raisins or dried cranberries
Cream Cheese Frosting:
4 oz cream cheese, softened
1/4 cup butter
1/2 teaspoon lemon juice
1 teaspoon vanilla
1/3 to 1/2 cup milk
1 pound powdered sugar
Directions:
Place 2 Texas or 3 dinner rolls on a bread board. Top with 1/4 cup apple
pie filling and 1 tablespoon raisins. With a knife, chop everything
until ingredients are mixed into the rolls. Lift, with a spatula, onto a
sprayed baking sheet. Repeat process with remaining ingredients. Bake at
350°F 20-25 minutes or until golden brown. Combine frosting
ingredients and mix well. Top with cream cheese frosting while still

Herbed Pork Chops in Mushroom Sauce 
This is a quick and easy recipe that will taste like it took hours to
prepare. 
Ingredients 
1/2 tsp. garlic powder
1/2 tsp. paprika
1/4 tsp. dried basil leaves or thyme leaves, crushed
4 boneless pork chops, 3/4 thick each
1 Tbs. vegetable oil 
1 medium onion, sliced
1 10 3/4 oz. can cream of mushroom soup or 98% fat free cream of
mushroom soup
1/4 C. milk 
Directions 
Mix garlic powder, paprika and basil. Coat chops with garlic powder
mixture. Heat oil in skillet. Add chops and cook until browned. Add
onion and cook until tender. Add soup and milk. Heat to a boil. Cover
and cook over low heat 10 minutes or until done. Serve with rice.

Perfect Homemade Pancakes
2 large eggs (separated)
1 teaspoon sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/4 cup vegetable or canola oil
1 cup milk (plus some for consistency)
1 and 1/3 cup flour
1 teaspoon vanilla (optional)
This recipe makes 4 large servings.
Beat the egg whites until stiff - set aside.
Beat the egg yolks. Add the sugar and salt and beat in.
Add the baking powder, beat until just mixed in well.
Add the flour, milk, and oil. Beat until smooth (not too much otherwise
the baking powder won*t react correctly). Add the vanilla. 
Add egg whites to batter and FOLD in gently. Let batter sit for 15-30
minutes prior to cooking.
Pour or scoop the batter onto the griddle, using approximately 1/3 cup
of batter for each pancake. Watch for air bubbles and then flip and
brown. Serve warm.

8 bread slices 
2 medium eggs 
2 cups milk 
1 teaspoon vanilla extract 
2 cups corn flake crumbs 
butter 
In a medium bowl, beat eggs, milk, and vanilla until blended. Melt
butter in a large skillet over medium high heat. Place corn flake crumbs
in a shallow dish or bowl. 
Dip each bread slice into egg mixture and then dip into corn flake
crumbs. Cook in buttered skillet until both sides are golden brown. Cut
French Toast into diagonals and serve with your favorite syrup.
 
This is basically plain French Toast coated with corn flake crumbs (or
you favorite cereal).

4 large eggs 
1 cup onion - chopped 
1/2 cup red bell peppers - chopped 
1/2 cup green bell peppers - chopped 
1/2 cup cooked ham - diced 
8 slices cooked bacon - drained and crumbled 
2 Tablepoons butter 
1/2 teaspoon salt 
1/2 teaspoon pepper 
a couple drops drops of your favorite hot sauce (optional) 
Melt butter in a large skillet or on a griddle.
Saute onion, bell pepper, ham and bacon in the butter until the onion
starts to become opaque. 
In a small bowl, whip the eggs lightly. Add salt and pepper and hot
sauce if desired. 
Slowly, stir the eggs into mixture in skillet. Lightly brown on one
side. Turn over and lightly brown other side.
 
You can omit the bacon for a more traditional Denver Omelet... but I
like mine kinda meaty (sometimes I even add a slice of American cheese)

1 small tomato -- chopped 
1 teaspoon dried oregano 
4 eggs -- beaten 
1/2 cup shredded sharp cheddar cheese 
1/2 cup salsa 
2 tablespoons olive oil 
3 corn tortillas -- cut into 1/2-inch pieces 
1 medium onion -- chopped 
1 jalapeño pepper -- chopped 
1 garlic clove -- minced 
In a large skillet, heat the olive oil over medium-high heat. Add the
tortilla pieces and cook for 2 to 3 minutes, until they begin to get
crisp, stirring occasionally. 
Add the onion, jalapeño pepper, and garlic, and saute for 1 to 2
minutes, or until the onion is transparent. Stir in the tomato and
oregano; mix well. 
Add the eggs and stir to scramble until the eggs are set. Remove the
skillet from the heat, add the cheese, and stir until the cheese is
melted. Top with the salsa and serve. 
Rice, black beans and warm corn tortillas make the perfect side dishes
for this south of the border gem.

4 ounces linguine pasta   
2 boneless, skinless chicken breasts, sliced into strips   
2 teaspoons Cajun seasoning   
2 tablespoons butter   
1 green bell pepper,chopped   
1/2 red bell pepper,chopped   
4 fresh mushrooms,sliced   
1 green onion, minced   
1 1/2 cups heavy cream   
1/4 teaspoon dried basil   
1/4 teaspoon lemon pepper   
1/4 teaspoon salt   
1/8 teaspoon garlic powder   
1/8 teaspoon ground black pepper   
2 tablespoons grated Parmesan cheese   
DIRECTIONS:   
Bring a large pot of lightly salted water to a boil. Add   
linguini pasta, and cook for 8 to 10 minutes; drain.   
Meanwhile, place chicken and Cajun seasoning in a bowl,   
and toss to coat. In a large skillet over medium heat,   
saute chicken in butter until no longer pink and juices   
run clear, about 5 to 7 minutes. Add green and red bell   
peppers, sliced mushrooms and green onions; cook for 2   
to 3 minutes. Reduce heat, and stir in heavy cream. Season   
the sauce with basil, lemon pepper, salt, garlic powder   
and ground black pepper, and heat through. In a large bowl,   
toss linguini with sauce. Sprinkle with grated Parmesan   
cheese and serve.

KEEPING COOKED PASTA WARM:   
Quickly drain the pasta and let it stand in the colander   
just long enough to drain. Transfer the drained pasta back   
to the cooking pan. The pan will be warm enough to keep   
the pasta warm while you prepare the sauce. Warm the serving   
dish before piling in the pasta: Fill the dish with hot water   
and let it stand a few minutes. Pour out the water, dry the   
dish, add the pasta, and serve immediately.   
* Cooked pasta can also be stored in airtight containers   
in the refrigerator for 3 to 5 days. If possible, store   
pasta and sauce separately. To reheat, simply drop pasta   
in boiling water for a few seconds; drain.

Poached Eggs on Portobello Mushrooms
4-6 portobello mushrooms, stems removed
1-2 Tbs (15-30 ml) olive oil
4-6 poached eggs
1 recipe blender hollandaise sauce (see below)
Brush the mushrooms with the olive oil on both sides and place on a
baking sheet. Cook under a preheated broiler for 5 minutes on each side.
Place gill-side up on serving plates, top with the poached eggs and
hollandaise, and serve immediately. Serves 4 to 6. 
Blender Hollandaise Sauce 
1/4lb (1 stick, 110 g)
3 egg yolks
2 Tbs (30 ml) lemon juice
Salt and white pepper to taste 
Melt the butter over a low flame until it begins to bubble. Remove from
heat. Put the egg yolks, lemon juice, salt and white pepper in the
container of an electric blender. Cover and blend on high speed for
about 5 seconds. Remove the cover and add the butter in a slow stream,
blending at high speed for approximately 30 seconds more. The sauce
should be smooth with no traces of unincorporated butter. If it is not,
replace the cover and continue blending until the butter is completely
incorporated, scraping the sides of the blender (with the motor off) if
necessary. Makes about 1 cup (250 ml).

Mediterranean Beef Pot Roast  Vegetables  
Fork-tender beef pot roast goes Mediterranean when slow cooked with
garlic, rosemary and red wine. The pan juices make extra flavorful
gravy.  
Serves: 6 to 8
Prep. time: 20 minutes
Cooking time:  10 to 11 hours
8 (approximately 1 pound) new red potatoes1/2 pound peeled baby carrots4
whole garlic cloves, peeled3 to 3 1/4 pounds boneless beef chuck
shoulder pot roast, or bottom round rump1 teaspoon dried rosemary
leaves, crushed1 teaspoon salt1/2 teaspoon pepper1/4 cup water1/4 cup
dry red wine2 tablespoons cornstarch, dissolved in 2 tablespoons
waterchopped parsley, for garnish
 
In slow cooker, place potatoes, carrots and garlic. Rub beef pot roast
with rosemary, salt and pepper; place on top of vegetables. Add water
and wine. Cover and cook on LOW 10 to 11 hours or until beef and
vegetables are tender. 
Remove pot roast; trim fat, if necessary. Arrange pot roast and
vegetables on serving platter; cover and keep warm. Just before serving,
carve pot roast across the grain into thin slices.
For gravy, strain cooking liquid; skim off fat. In small saucepan,
combine 2 cups cooking liquid and cornstarch mixture until blended.
Bring to a boil; cook and stir 1 minute or until thickened. Garnish beef
and vegetables with parsley; serve with gravy.

 2/3 c. sweetened condensed milk
 1 tsp. vanilla
 1/8 tsp. salt
 1 c. walnuts, chopped

 Microwave chocolate and milk in 1 1/2 quart microwave bowl on High 2
 minutes, stirring after 1 minute. Stir until chocolate is completely
 melted
 and smooth.
 Stir in vanilla, salt and walnuts. Spread in greased 9 x 5 inch loaf pan.
 Refrigerate until firm, about 2 hours. Cut.

 PEANUT BRITTLE

 1 c. raw peanuts
 1/2 c. light corn syrup
 1/8 tsp. salt
 1 tsp. vanilla flavoring
 1 c. sugar
 1 tsp. soda
 1 tsp. margarine

 Combine peanuts, sugar, salt and corn syrup in ovenproof mixing bowl, at
 least 3 quart size. Cook in microwave oven on high for 4 minutes, stir,
 then
 cook
 2 more minutes. Nuts should be golden brown. Add soda and vanilla. Stir
 until light and foamy. Pour onto a greased cookie sheet spreading mixture
 as
 thin
 as possible. Let cool, then break into serving pieces. Store in zip-lock
 bag. Fill mixing bowl with hot water as soon as empty to make cleaning
 easier.
 Cooking time may vary depending on microwave.

 EAGLE BRAND CHOCOLATE FUDGE

 12 oz. semi-sweet chocolate chips
 1 can Eagle Brand milk
 2 heaping tbsp. peanut butter

 Place chocolate chips and milk in microwave safe bowl. Cook on high for 5
 minutes. Remove from microwave, stir in 2 heaping tablespoons of peanut
 butter.
 Spread in pan. Cool and cut.

 PEANUT CLUSTERS

 6 sq. of almond bark (white)
 6 oz. or 12 oz. chocolate morsels
 1 can salted peanuts

 Melt almond bark and chocolate in microwave. Add peanuts and drop on 
 waxed
 paper.

 MICROWAVE MOUNDS

 1 can Eagle Brand condensed milk
 2 c. powdered sugar
 14 oz. bag coconut
 1 tsp. vanilla flavoring

 Mix and roll into balls and refrigerate until firm. 1 (12 oz.) bag
 chocolate
 chips
 1/4 lb. paraffin wax

 Melt above ingredients in the microwave or double boiler. Dip balls twice
 in
 chocolate mixture.

 TURTLES

 12 oz. semi sweet chocolate chips
 4 oz. unsweetened chocolate
 4 tbsp. unsalted butter

 Melt above ingredients in double boiler or microwave. Stir in 1 1/2 cups
 sugar. Beat well and stir in: 4 eggs
 2 tsp. vanilla

 Combine: 1/2 c. flour (spoon into cup)
 1/2 tsp. baking powder
 1/4 tsp. salt

 Stir in: 1 to 2 c. chopped pecans
 12 oz. chocolate chips

 Line cookie sheet with foil. Drop 1/4 cup cookie mix and make arms and
 legs
 with whole pecans for turtles. Bake at 350 degrees for 10 to 12 minutes.

 MARBLE FUDGE

 1 (12 oz.) pkg. semi-sweet chocolate
 1 (12 oz.) pkg. butterscotch
 1 c. peanut butter
 1 (10 1/2 oz.) pkg. mini marshmallows
 1 c. salted nuts

 1. Combine chocolate, butterscotch and peanut butter in large glass bowl.
 2.
 Microwave on medium 5 minutes. Stir until melted. 3. Fold in marshmallows
 and
 peanuts. Spread in a buttered 13 x 9 inch pan. 4. Refrigerate for several
 hours or until set. Cut into squares.

 PRETZEL CANDY

 1-1/2 c. white chocolate
 3/4 c. broken pretzel sticks
 3/4 c. dry roasted nuts

 Melt white chocolate in microwave. Stir in pretzels and peanuts. Pour out
 on
 cookie sheet. Freeze 10 minutes. Break apart.

 MICROWAVE CARAMELS

 1 c. butter or margarine, melted
 1 (14 oz.) can sweetened condensed milk
 1 c. light corn syrup
 1 (1 lb.) pkg. light brown sugar
 1 tsp. vanilla extract
 2 c. semisweet chocolate chips, melted

 *Blend first 4 ingredients in large microwave-safe bowl. Microwave on 
 High
 for 17 minutes, stirring every 3 minutes, mix in vanilla. *Pour into
 buttered
 9x13 pan. Chill in refrigerator overnight. *Pour melted chocolate over
 caramels. Cut into 1-inch squares. *May substitute almond bark for
 chocolate
 chips
 or increase amount of chocolate and dip caramel squares into chocolate to
 coat on all sides. *Yield: 10 dozen.

 BON BON'S

 6 to 8 oz. chocolate wafers
 2 c. white corn syrup
 1 bag dried coconut

 Bring corn syrup to a boil. Pour over dried coconut. Let it set for an
 hour
 and then roll into small balls. Cover with melted candy. Melt candy over

 double
 boiler until smooth. Or put in microwave oven for 2 1/2 minutes on High

Jumbled Greens

 

Makes 8 side-dish servings --Chef Paul Prudhomme

 

You can use vegetable or chicken stock.   If you don't have Chef

Paul's products you can use the powder form of the Knorr

boullion.  Also, I like to add some minced ham with the onions.

Once you try cooking greens like this in about 30 minutes, you

won't want to go back to boiling them for hours.  Don't forget

to have some hot buttered cornbread to serve along with the

greens!

Ingrediants:

2 tablespoons peanut oil

1½ cups chopped onions

1 bunch collard greens, washed, stemmed, and torn into 3- to

4-inch pieces

1 tablespoon plus 1 teaspoon Chef Paul Prudhomme's Vegetable

Magic®

1 bunch mustard greens, washed, stemmed and torn into 3- to

4-inch pieces.

½ cup chopped fresh cilantro

1 cup vegetable stock, in all

1 (10-ounce) bag fresh spinach, washed, stemmed, and torn into

3- to 4-inch pieces

1 teaspoon sugar

 

Directions:

Preheat a heavy (preferably cast-iron) 4-quart pot over high heat to 350°, 
about 4 minutes.

Add the oil and, when it begins to smoke, about 4 minutes, add the onions. 
Cook, stirring

occasionally, until the onions begin to turn golden brown, about

6 minutes, then add the collard greens and the Vegetable Magic.

Scrape the bottom of the pot and cook, stirring occasionally, until the greens 
are sticking on the bottom and about to burn, about 3 to 4 minutes.

Add the mustard greens and cilantro and stir and cook for 1 minute.

Add ½ cup stock and scrape the bottom of the pot.

The greens will cook down, and the onions will turn dark brown.

Cook until all the liquid evaporates, about 10 to 12 minutes, then add the 
remaining stock.

Scrape the bottom of the pot and add the spinach.

Stir and cook for 3 minutes.

Add the sugar and cook for 1 minute longer.

Remove from the heat and serve.

Ingrediants:

3 pounds beef chuck

Freshly ground black pepper

Gray salt

1/2 teaspoon ground cinnamon, plus 1 teaspoon

1 teaspoon ground cumin, plus 2 teaspoons

2 tablespoons chili powder, plus 2 tablespoons

Masa harina (Mexican corn flour)

1/2 cup extra-virgin olive oil

1/4 cup lard (Manteca)

4 red onions, peeled and minced

6 cloves garlic, minced

4 jalapeno peppers, sliced thin with seeds, stems removed

1/4 cup tomato paste

2 teaspoons dried oregano

2 to 3 (12-ounce) bottles beer

1 (12-ounce) can diced tomato in juices

1 quart chicken stock

3 (12-ounce) cans black beans

2 ounces bittersweet chocolate, cut into large chunks

 

Directions:

Cut the chuck into ¾-inch pieces, or, to save time, have your butcher do this 
for you.

Place the chuck in a large bowl.

Season liberally with pepper (about 20 turns of the pepper grinder) and grey 
salt to taste- remember half of this will come off in the pan.

Season with 1/2 teaspoon of the cinnamon, 1 teaspoon of the cumin, and 2 
tablespoons of the chili powder.

Mix this well and coat the meat with the masa harina (this is a ground hominy 
flour common to Mexican cuisine and easily found in the Mexican food sections 
of many grocery stores).

The flour will thicken the sauce and give it a specific, Mexican taste.

Preheat a cast iron Dutch oven on the stove over medium high heat.

Add the olive oil and then the coated meat, spreading it evenly so it covers 
the bottom of the Dutch oven in 1 layer.

Leave it alone, without turning it, so the meat will brown and caramelize.

Meanwhile, add the lard.

The meat has a lot of moisture in it, so a good amount of steam will come from 
the pan before it is caramelized.

As it browns, slowly turn each piece with tongs.

Once all sides are caramelized, remove the meat from the pan with a slotted 
spoon and place on a cookie sheet to cool,

leaving juices in the Dutch oven to saute vegetables.

Add the onions and garlic and saute for 5 minutes over medium heat until they 
start to caramelize and get soft.

Add the jalapenos and allow to cook for 2 more minutes until soft.

Add the tomato paste.

Some of the same spices as were used on the meat will be used in the sauce.

Add the remaining 2 teaspoons of the cumin, 1 teaspoon of the cinnamon, the 
oregano, and 2 heaping tablespoons of the chili powder.

Add beer.

Stir to incorporate everything.

Add diced tomatoes, and stir.

Then add the reserved meat.

Add chicken stock.

Simmer for 1 1/2 hours until meat is wonderfully tender.

Strain juice from the black beans, add the beans to the chili pot and bring up 
to simmer.

Then add chunks of bittersweet chocolate.

Stir until it melts.

Serve immediately or store in the refrigerator for 2 to 3 days.

1/2 c.   Ketchup

1/4 c.   Sweet relish

2  Eggs, hard boiled, chopped

12 oz.   Crab, lobster or shrimp

1  Avocado, sliced thinly

3  Tomatoes, quartered

1/2 lb.  Asparagus spear, cooked al dente

 

Directions:

Mix all ingredients for dressing; chill.

Make bed of lettuce on each plate

mix crab  dressing; place scoop in center of each plate

arrange avocado, tomatoes and asparagus; and drizzle w/dressing.

1 c.  Whipped cream

 

Combine sugar, cornstarch;  milk in blender; heat till

thickened  bubbly; remove and gradually stir into beaten eggs;

return and cook till thick; remove add butter, concentrate and

coconut; turn into pie shell  chill.  Combine cheese  sugar

till well blended; fold in whipped cream; spread over filling;

chill.  Sprinkle top w/toasted coconut.

1  Favorite premade pie crust

3  Eggs, beaten

15 oz.   Pumpkin

1/2 c.   Brown sugar

1 t.   Cinnamon

1/4 t.Cloves

2 T.  Maple syrup

12 oz.   Evaporated milk

1/2 c.   Flour

1/2 c.   Pecans

1/4 c.   Brown sugar

3 T.  Butter

 

Directions:

Beat eggs till frothy; add all remaining ingredients

pour into crust and bake @ 375° for 25 min.

Combine all topping ingredients and sprinkle over filling

bake an additional 25 min.

Instructions

1. Heat 1 tablespoon dark sesame oil in a sauté pan over medium

heat. Add garlic and stir.

2. Place the chicken in the sauté pan and brown 4 minutes on

each side. Remove from pan, slice into strips, and set aside.

3. Add remaining tablespoon of oil to your sauté pan and warm

over high heat. Add the vegetables and teriyaki sauce. Stir-fry

quickly until the vegetables begin to soften.

4. Add the chicken strips, combine well, and continue to cook

for 2 to 3 minutes. Serve immediately.

Pepper Steak

Ingredients

1-1/2 lbs sirloin steak, 1/2 inch thick

2 medium white onions, chopped

1 cup beef broth

1 tablespoon soy sauce

2 green peppers, cut into 1-inch pieces

2 teaspoons cornstarch

1/4 cup cold water

2 tomatoes, peeled and cut into eighths (optional)

Cooked rice

 

Instructions

1. Trim fat and bone from meat; cut meat into 4 to 6 serving

pieces.

2. Grease large skillet lightly with fat from meat.

3. Thoroughly brown meat on both sides.

4. Add onions; cook and stir until tender.

5. Mix in beef broth and soy sauce. Cover; simmer for 10 minutes

or until meat is tender.

6. Add green peppers. Cover; simmer for 5 minutes.

7. In a small bowl, blend cornstarch and water and gradually

stir into skillet. Add tomatoes and heat for one minute. Serve

over cooked rice.

Pot Roast

 

 

Ingredients

1 (3 to 4 pound) piece beef chuck roast, trimmed of excess fat

Kosher salt and freshly ground black pepper

3 tablespoons olive oil

1 cup canned crushed tomatoes

1 cup water

1 lb small red potatoes, quartered

2 red onions, quartered

2 garlic cloves, chopped

8 carrots, sliced

2 celery stalks, sliced

1 cup button mushrooms, stems removed

2 sprigs fresh rosemary

4 sprigs fresh thyme

2 bay leaves

 

Instructions

1. On a plate, season all sides of the beef with a fair amount

of kosher salt and black pepper.

2. In a large Dutch oven or other heavy pot that has a

tight-fitting lid, heat 2 tablespoons of the olive oil over

moderately high heat. Add the beef chuck roast.

3. Brown the meat on all sides, taking the time to get a nice

crust on the outside. Pour in the tomatoes and the water.

4. Scatter the potatoes, onions, garlic, carrots, celery,

mushrooms, rosemary, thyme, and bay leaves around the pot roast.

Season with salt and pepper and drizzle with the remaining

tablespoon of oil.

5. Cover the pot and reduce the heat to low. Braise for about 3

hours, basting every 30 minutes with the pan juices, until the

beef is fork tender. Discard bay leaves.

6. Slice the pot roast and arrange on a platter surrounded by

the vegetables. Serve with the pot juices.

Chicken Tortilla Soup

Ingredients

2 skinless, boneless chicken breasts, cut into cubes

1/2 teaspoon olive oil

1/2 teaspoon minced garlic

1/4 teaspoon ground cumin

2 (14.5 ounce) cans chicken broth

1 (16 ounce) can black beans, rinsed

1 cup frozen corn kernels

1 cup chopped onion

1 fresh jalapeño pepper, chopped

1/2 teaspoon chili powder

1 tablespoon lemon juice

1 cup chunky salsa

1 cup corn tortilla chips

1/2 cup shredded Monterey Jack cheese (optional)

Sour cream

 

Instructions

1. In a large pot over medium heat, sauté the chicken in the

olive oil for 5 minutes. Add the garlic and cumin and mix well.

2. Then add the broth, corn, onion, jalapeño, black beans, chili

powder, lemon juice, and salsa. Reduce heat to low and simmer

for about 20 to 30 minutes.

3. Break up some tortilla chips into individual bowls and ladle

soup over chips. Garnish with cheese, sour cream, and additional

broken tortilla chips.

Banana Cream Pie

 

Crust

1-1/2 cups all-purpose flour plus flour for rolling

1/2 teaspoon salt

1/4 cup solid vegetable shortening, chilled

1/4 cup unsalted butter, chilled

4 to 8 tablespoons ice water

 

Directions:

Combine the flour and salt in a food processor fitted with the metal blade.

Add the shortening and butter and process using on/off pulses until the mixture 
is the size of peas.

Add the water 1 tablespoon at a time, processing until the dough just begins to 
come together.

Form the dough into a ball.

Flatten into a disk.

Wrap in plastic and refrigerate until chilled, at least 1 hour.

Preheat the oven to 350° F.

Remove the chilled dough from the refrigerator.

Let soften slightly if necessary.

Roll out the dough on a lightly floured surface to a 10-inch round, about 
1/8-inch thick.

Transfer the dough to a 9-inch pie dish.

Crimp the edges decoratively.

Line the dough with foil and pie weights or dry beans to keep the crust from 
bubbling up during baking. Bake until the edges of the crust are lightly 
browned, about 10 to 15 minutes.

Remove the weights and foil and continue to bake for 5 to 7 minutes, until the 
whole crust is golden brown.

Transfer to a rack.

Let cool completely.

 

Pastry Cream:

  2 cups whole milk 1/2 vanilla bean, split lengthwise

1/2 cup granulated sugar

1/4 cup all-purpose flour

2 tablespoons cornstarch

3 eggs

3 tablespoons unsalted butter

 

Pour the milk into a large saucepan and place over low heat.

Scrape in the seeds from the vanilla bean, then add the pod, as well.

Heat until warm.

Stir in 1/4 cup of the sugar and continue to warm until small bubbles form 
around the edge of the pan, about 5 to 7 minutes.

Using an electric mixer, beat together the flour, cornstarch, eggs and 
remaining 1/4 cup sugar until smooth.

Slowly whisk the warmed milk into the egg mixture.

Return the mixture to the saucepan.

Stir over low heat until thick and slightly bubbly, about 10 minutes.

Remove from heat.

Strain into a large bowl.

Add the butter and stir until melted.

Press plastic wrap directly onto the surface of the pastry cream.

Let cool, then refrigerate until chilled.

 

Topping

1 cup heavy cream

2 tablespoons granulated sugar

1/2 teaspoon vanilla extract

4 to 5 bananas, peeled and cut into 1/4-inch slices

Chocolate shavings (for garnish)

 

Beat together the cream, sugar and vanilla extract in a large bowl until stiff 
peaks form.

Assembly:

Spread a thin layer of pastry cream in the crust.

Top with a layer of bananas.

Continue to layer bananas and pastry cream until you reach the top of the 
crust, finishing with the pastry cream to prevent the bananas from turning 
brown.

Top with the whipped cream and garnish with chocolate shavings.

Serves 8 to 10.

Spicy Oven-Baked Chicken

Makes 4 servings

Prep: 25 minutes

Chill: 2 hours

Bake: 40 to 45 minutes

Ingredients

. 2 tablespoons fresh lemon juice

. 2 teaspoons ground turmeric

. 1-1/2 teaspoons paprika

. 1 clove garlic, minced

. 1/2 teaspoon salt

. 1/2 teaspoon ground garam masala

. 1/4 teaspoon ground allspice

. 1/4 teaspoon cayenne pepper

. 4 5-ounce bone-in chicken thighs

. 4 4-ounce chicken drumsticks

. 2 teaspoons cooking oil

list end

 

Directions

1. In a small bowl combine lemon juice, 1-1/2 teaspoons of

the turmeric, the paprika, garlic, salt, garam masala,

allspice, and cayenne.

2. Loosen chicken skin slightly and rub spice mixture under

skin. Place drumsticks and thighs (skin-side up), in a

shallow roasting pan. Combine remaining

turmeric and oil; brush on chicken. Cover and chill for 2 to

4 hours.

3. Bake, uncovered, in a 400 degree F oven for 40 to 45

minutes or until a meat thermometer inserted into thickest

portion registers 180 degree F. Makes

Basic Buttermilk Spice Cake

1 18.25-oz. pkg. spice cake mix
1 c. buttermilk
1/3 c. sweetened applesauce
1/3 c. vegetable oil
3 large eggs
1/4 tsp ground cinnamon

Preheat oven to dg350. Grease and flour a 13- by 9-inch cake pan.

In large bowl with mixer at low speed combine cake mix, buttermilk,
oil, applesauce, eggs and cinnamon for one minute. increase speed to
medium and beat 2 minutes more. Pour batter into prepared pan. Bake
30-35 minutes. Remove from oven and cool on wire rack.

Black Magic Cake

1 c. butter or margarine, cut up
3/4 c. chocolate syrup
8 Milky Way bars *2.5-oz. each), cut up
2 c. sugar
1 c. buttermilk
1 tsp vanilla extract
4 large eggs, lightly beaten
2-1/2 c. all-purpose flour
3/4 c. unsweetened cocoa
3/4 tsp salt
1/2 tsp baking soda

Preheat oven to dg325. Grease 12-cup Bundt pan.

Melt butter, syrup and Milky Way bars. Whisk until smooth.

Whisk in sugar, buttermilk, vanilla and eggs. Stir in flour, cocoa,
salt and baking soda.

Pour batter into pan. Bake 1-1/2 hours or 1 hour 40 minutes or until
tests almost clean. Cool in pan or wire rack 10 minutes. Loosen cake
from pan and invert onto rack to cool.

Yield 20 servings 375 calories each.

Blueberry Buttermilk Bundt Cake

3 c. all-purpose flour
1 tbsp baking powder
1 tsp salt
1-2/3 c. sugar
3/4 c. (1-1/2 sticks) unsalted butter, room temperature
3 large eggs
1 tbsp grated orange peel
2 tsp vanilla extract
3/4 c. buttermilk
2 c. frozen blueberries
Powdered sugar

Preheat oven to dg350. Butter and flour 10-inch Bundt pan.

Whisk flour, baking powder and salt in medium bowl. Using electric
mixer, beat 1-2/3 cups sugar and butter in large bowl until light and
fluffy. Beat in eggs, one at a time. Beat in orange peel and vanilla.
Beat in dry ingredients in three additions, alternately with
buttermilk in two additions. Fold in blueberries. Pour batter into
prepared pan. Bake until tests clean about one hour. Cool cake in pan
on rack ten minutes. Turn cake out onto rack and cool completely.
Transfer cake to plate, sift powdered sugar over and serve.

Yield 12 servings.

2 pounds ground beef

1/2 bell pepper chopped
1/2 cup crackers crushed
1/2 cup milk
1 egg well beaten 
1 teaspoon seasoning salt
2 tablespoons steak sauce
1/2 cup ketchup
morson crackers with milk, sit a side.
combine all ingredients, add crackers, mix well.
place in microwave loaf pan, top with ketchup.
bake 30 minutes, on half power, or slow power, until done.
makes 6 servings.

Carolina BBQ Rub--
2 tablespoons salt
2 tablespoons sugar
2 tablespoons brown sugar
2 tablespoons ground cumin
2 tablespoons chili powder
2 tablespoons freshly ground black pepper
1 tablespoon cayenne pepper
1/4 cup paprika
Combine all ingredients in a small bowl and mix well; use as a dry
rub on beef, chicken, lamb or pork.

--Jack Daniel's Grilling Sauce--
1/2 cup pineapple juice
3 tablespoons soy sauce
1 1/2 teaspoon garlic powder
1/4 cup Jack Daniel's Whiskey
Combine all ingredients and mix well. Dip meat in sauce and place
on grill over hot coals. When meat is turned, brush with sauce.
Grill to desired degree of doneness. Just before meat is removed
from grill, brush again with sauce. Makes enough for 8 servings.
--Honey Spiced BBQ Sauce--
1 1/4 Cup Catchup
2/3 Cup Salad oil
3/4 Cup Vinegar
5 Tablespoons Worcestershire sauce
1 Cup Honey
2 Tablespoon Dry mustard
3 Teaspoon Ginger, fresh grated
1 Lemon, sliced thinly
3 Tablespoons Butter
Combine all ingredients in a saucepan and heat to blend together.
Remove lemon peel before basting.

MICROWAVE MUSHROOM BURGERS 

1 lb. lean ground beef
1 (4 oz.) can sliced mushrooms
3 tbsp. finely chopped onion
3 tbsp. finely chopped chives
1 tsp. garlic salt
Dash black pepper
1 egg
2 tbsp. butter
Hamburger buns, for serving
Lettuce, tomatoes, pepper rings for garnish


In a microwave dish, combine mushrooms, onions, chives, black 
pepper and garlic salt. Microwave at MEDIUM power for 3 minutes. 
Let stand 3 minutes for flavors to blend. Reserve some mushrooms 
for garnish.Combine beef, mushroom mixture and egg. Shape mixture 
into 4 even patties. Place onto micro-safe rack or pan. Microwave 
at HIGH power for about 2 minutes. Let stand for 2 minutes. Turn 
patties over. Microwave on other side for 1 1/2 to 2 minutes or 
until done to your liking. Serve on hot buns. Garnish with 
reserved mushrooms, tomato slices, pepper rings or other 
condiments of your choice.

Makes 4 servings.

CARAMEL CORN IN A BAG (MICROWAVE) 

2 microwave bags of popcorn or 2 large bowls popped popcorn
1 c. brown sugar
1/4 c. light Karo syrup
1 c. butter
1/2 tsp. vanilla
1/2 tsp. baking soda


Place popped corn in brown paper grocery bag. it should come up 
to the first fold.Put sugar, syrup and butter in microwaveable 
dish and cook 2 minutes on high. Stir then cook 1 more minute on 
high. Add vanilla and baking soda, whip until frothy, then pour 
over popcorn in bag. Seal bag top by rolling down the top.

Microwave on high for 30 seconds. Shake the bag. Repeat by 
cooking for 30 seconds 2 to 3 more times, shaking the bag in 
between until popcorn is well coated. Put popcorn into bowl(s) 
toss the bag!

Salt and pepper the steak both sides. Put into microwave deep 
dish and immerse in water; add enough salt and pepper for the 
water. Microwave on high setting for 12-15 minutes turning the 
meat over about halfway the cooking process. Tastes like prime 
rib.

CHICKEN BREASTS DIANE (MICROWAVE) 

4 lg. boneless chicken breast halves
1/2 tsp. salt
1/4 tsp. black pepper
2 tbsp. olive or salad oil
2 tbsp. butter
3 tbsp. chopped fresh chives or green onions
Juice of 1/2 lime or lemon
2 tbsp. brandy or cognac (optional)
3 tbsp. chopped parsley
2 tsp. Dijon mustard
1/4 c. chicken broth


Place chicken breasts between sheets of waxed paper or plastic 
wrap and pound slightly. Sprinkle with salt and pepper. In a 
micro-safe dish, melt butter and mix with oil. Place chicken 
breasts in dish, coating on both sides. Heat at high speed for 1 
minute. Rest for 1 minute. Heat again at high speed for 3 
minutes, until chicken is done.Prepare sauce by mixing chives or 
green onions, lime juice, and brandy, if used, mustard, and 
parsley in a micro-safe dish. Heat at high speed for 1 minute. 
Add juices from chicken and broth. Stir until smooth. Pour sauce 
over hot chicken. Serve immediately with

CHICKEN LOAF WITH HERBS MICROWAVE 

2 slices of white bread, cubed
1/3 c. milk
4 slices of bacon, diced
1 c. chopped onions
1 tbsp. minced garlic
1/4 tsp. thyme
1 1/2 lbs. ground chicken
1 lg. egg, lightly beaten
2 tbsp. chopped parsley
3/4 tsp. salt
1/2 tsp. pepper
2 tbsp. dijon mustard


Combine bread and milk in a bowl and let stand until bread is 
softened.Place bacon in 9 inch microwave pie plate. Cover with 
wax paper or plastic wrap with one corner up to vent microwave on 
high 4 minutes. Or until crisp. Drain. Put 2 tsp. drippings back 
and add onions, garlic and thyme. Cover and microwave 3 minutes 
(stirring once halfway through.) Cool. Combine chicken, soak 
bread, bacon-onion mixture, egg, parsley, salt and pepper in 
large bowl and blend well. Pat into 8 1/2 x 4 1/2 inch microwave 
proof loaf pan. Spread top with mustard. Cover and microwave 5 
minutes on high. Then microwave on medium for 17 to 20 minutes 
more. If checked by meat thermometer loaf should reach 165 
degrees F. If serving hot let stand 5 minutes or cool to room 
temperature then cover and refrigerate. When cold unmold and 
slice into 1 1/2 inch thick slices.

To oven bake, preheat oven to 375 degrees, cook bacon in skillet, 
drain all but 2 teaspoon of drippings and add onions and cook 3 
minutes. Then add garlic and thyme, cook 30 seconds more. Cool. 
Combine with remaining ingredients as directed. Bake 60 to 65 
minutes uncovered. 290 calories per serving.

Spray a microwave-safe mug with cooking spray.
Pour in egg mixture.
Microwave, uncovered, on HIGH for 1 minute; stir.
Cook 1 to 1-1/2 minutes longer or until eggs are completely set.

Whisk soup and milk until blended. Stir in remaining ingredients 
except 1/2 cup of cheese. Cover and refrigerate 12 hours or 
overnight. Microwave 15 to 17 minutes. Sprinkle with 1/4 cup 
cheese. Let stand until cheese melts, 5 to 7 minutes.

Pecan Logs with Nougat Center 
  Nougat: 
  1 1/2 cups sugar 
  1 1/4 cups light corn syrup 
  1/4 cup water 
  2 large egg whites 
  NOTE: This recipe requires a heavy free-standing mixer. Most hand
mixers will burn out when thickening the egg white and hot syrup mixture
to the consistency of marshmallow creme. 
  Combine sugar, syrup, and water in heavy 3-quart saucepan; mix well.
Cook over medium-high heat to boiling, stirring constantly to dissolve
sugar. This should take 5 to 7 minutes. Carefully clip a candy
thermometer to side of pan. 
  Cook over medium heat, without stirring, to soft-ball stage (238
degrees F). Mixture should boil at a moderate, steady rate over the
entire surface. (Watch closely; mixture reaches soft-ball stage in 5 to
6 minutes.) Remove from heat; remove thermometer from saucepan. 
  Immediately beat egg whites in a large mixer bowl with sturdy,
freestanding electric mixer (do NOT use a hand mixer) on medium speed
until soft peaks form (tips curl). Gradually pour hot syrup in thin
stream over whites, beating on medium speed. 
  Continue beating after all syrup is added until mixture reaches
consistency of marshmallow creme, 5 to 7 minutes. Shape into 
  4-1/2in x 1-1/4 inch logs.  (cover with foil or waxed paper and chill
overnight in refrigerator; mixture will keep several days.)

  Pecan Logs 
  6 of the nougat logs you prepared above 
  1 bag (14 ounces) caramels 
  3 Tbl water 
  1 1/2 cups roasted chopped pecans (or peanuts or whatever) 
  Melt the caramels with the 3 Tbls of water until smooth.  Dip logs
into caramel; roll in pecans.  Chill for 2 hours.  Cut into 1/3 in
slices if desired. 
  Makes about 6-1/2 dozen if cut into 1/3 inch slices

HAMBURGER CHEESE STEAK WITH MUSHROOM GRAVY

MUSHROOM CHEESE HAMBURGER STEAK 

1 1/2 lbs. hamburger meat
2 jars of brown gravy
1 medium onion
1 can of mushrooms
1 egg
4-5 slices of Swiss or provolone cheese
salt and pepper
2 tablespoons of butter


Sauté sliced onions and mushrooms in buttered skillet. Mix 
hamburger meat and egg. Shape meat mixture into patties and fry 
in skillet. When meat is fully cooked in skillet, melt cheese on 
patties. Remove patties from skillet and drain excess 
grease.Return skillet to stove on medium heat and combine the 
sautéed onion, mushrooms, and 2 jars of brown gravy. Heat until 
bubbly and add removed patties back into the skillet. Great with 
mashed potatoes.

3 sm. onions, peeled and quartered


Sprinkle roast with salt, herbs and pepper. Place lean side up in
13 x 9 x 2 inch baking dish. Add vegetables and broth, cover with
plastic wrap and microwave on medium high for 35 minutes, giving
dish a 1/2 turn and stirring vegetables occasionally. Turn lean
side down, cover and microwave on medium high for 40 minutes,
giving a 1/2 turn once. Remove to platter and cover with foil.To
make gray, pour juices in 4 cup glass measure, skim off fat. Mix
3 tablespoons cornstarch and 1/4 cup cold water, add to juices.
Stir in 1/2 teaspoon Kitchen Bouquet. Microwave on high around 3
minutes, stirring every 30 seconds. Serves 4

20 MINUTE MICROWAVE MEAT LOAF 

1 1/2 lb. ground beef
2 c. bread or cracker crumbs
3/4 c. onions
1/4 c. bell pepper
2 eggs
3/4 c. ketchup
5 tsp. salt
5 slices American cheese


Slightly beat eggs with fork. Add all other ingredients.
Microwave in ring mold. Microwave on high for 15 minutes. Add
cheese slices on top. Microwave 5 minutes longer. Let stand 5
minutes.
