It depends. If they're listed as AAC files, then you can convert them
in iTunes by selecting Advanced Convert to...

There are no problems burning it to a CD you can play on your car
stereo. Create a playlist, click burn. Same as you would with AIFFs,
MP3s, unprotected AACs, OGGs, and any other format you can play through
iTunes.

I made my first download at the Apple music store recently. Then I went
to put the music on a CD, and found I could not convert the music files
to AIFF. Here's the message I got:
All the songs in the folder or on the disk will be converted except
songs you purchased from the Music Store.
Just create a playlist in iTunes, insert a blank CD, and click the burn
button to the right of the track name display. You can't convert
protected AAC files to AIFF in iTunes, but you can still burn them.

I am not sure as to what version of iTunes you're referring to, but I have versions

meaning they would load, but when I clicked on them they weren't
actually there (in Itunes). Luckily I own the original cds for the
music I lost, but two months of work, and some cool new stuff from my
Ipod is gone...

At $60 an hour, why don't you purchase an external case for the 6Gig and do
your own transferring, thus saving some money and getting and external HD as
well?

an hour (maybe!), and a case would be perhaps double (?) this cost.
